This savory dish of roasted delicata, rainbow carrots, and crispy apple-Brussels salad is crowned with Colvard Maple Sage Sausage. This masterpiece embodies sophistication and rich flavor.

INGREDIENTS

  • 3 Delicata Squash
  • 4-5 Rainbow Carrots, Peeled
  • 2 Packs Colvard Maple Sage Sausage Links (Item #28612)
  • 1/2 Cup Chopped Pecans
  • 2 1/2 Tbsp, 1 Tbsp Syrup, Divided
  • 1 1/2 Tbsp, 2 Tbsp Apple Cider, Divided
  • 1 Apple, Julienned
  • 8-12 Brussel Sprouts
  • 1/2 Tsp Stone Ground Mustard
  • 1 Tbsp Sherry Vinegar

DIRECTIONS

  1. Preheat oven to 350°. Toast pecans on baking sheet for 10 min. Remove from baking sheet and set aside.
  2. For the delicata squash, cut in half lengthwise, scrape out seeds, and cut each half lengthwise again. Turn the squash horizontally and cut into 1/4″ thick slices.
  3. Prepare the carrots using a roll cut. Place carrots and squash in a single layer on a baking sheet with edges.
  4. In a small bowl, combine 2 1/2 tbsp of maple syrup and 1 1/2 tbsp of apple cider. Pour over carrots and squash, then roast for 25 minutes.
  5. While the vegetables are cooking, in a large skillet over medium heat, sear the outside of all the maple sage links until golden brown.
  6. Finish cooking the maple sage links in the oven by placing them directly on top of the carrots and squash. Cook for an additional 10 minutes.
  7. Cut brussels in half and finely slice, leaving out the core. Place in a medium-sized bowl with the julienned apple.
  8. To make the dressing, combine 1 tbsp maple syrup, 1/2 tsp stone-ground mustard, 2 tbsp apple cider, and 1 tbsp maple syrup, 1/2 tsp stone-ground mustard, 2 tbsp apple cider, and 1 tbsp sherry vinegar in a small bowl with a whisk. Pour over the brussels and apple and let sit for at least 10 minutes. Toss with 1/2 cup toasted chopped pecans.
  9. When carrots, squash, and sausage are done cooking, let them rest for 2 minutes before cutting sausage links. Serve with brussel salad on top.

INGREDIENTS

  • 1 Pack Colvard Bratwurst
  • 2-3 Medium Sized Yellow Onions, Sliced
  • 1 Small Leek, Sliced
  • 2-3 Garlic Cloves, Minced
  • 4-5 Red Bliss Potatoes
  • 12 oz Can Beer
  • 2 Cups Beef Broth
  • 2-3 Bay Leaves
  • 2 Pie Crusts
  • 2 Tbsp. Flour
  • 1 Egg

DIRECTIONS

  1. Preheat oven to 375°. Brown Colvard Bratwurst in a Dutch oven or a skillet with high sides over medium heat until golden brown on all sides.
  2. Add sliced onion, leeks, and minced garlic, stirring to incorporate and deglaze the pan. Continue stirring until the onions become translucent.
  3. Stir in the potatoes. Add beer and bay leaves, cooking until the liquid is reduced by half or enough to coat the bottom of the pan. Add beef broth and let it simmer.
  4. Roll out the bottom pie crust and place it in a pie dish with a 1/4″ overhang to seal the edges. Poke holes in the bottom crust with a fork and bake in the oven for 5-8 minutes.
  5. While the bottom crust bakes, roll out the top crust for later use.
  6. Remove the brats from the potato and onion mixture, letting them rest for 2 minutes. Discard the bay leaves.
  7. Take about 1/2 cup of liquid from the pan, mix it with 2 tablespoons of flour in a separate bowl, and whisk until fully incorporated. Add it back into the pan, stirring to combine.
  8. Cut the brats into 1/4″ thick slices and return them to the pan. Cook for an additional 2 minutes.
  9. Remove the pan from heat. Spoon the pie filling into the pre-baked crust and cover it with the reserved pie crust. Pinch together the edges, folding the bottom crust over the top.
  10. In a small bowl, beat one egg, brush it over the pie crust, and bake for 25-30 minutes or until the crust is golden brown.

cilantro, chopped 2 tbsp.

chicken Broth 1 cup
Campbell’s® Condensed Tomato Soup (Item #76910) 1 can
cooked brown rice 24 cups
frozen whole kernel corn, thawed, drained 6 cups
black beans, canned, rinsed, drained 6 cups
monterey Jack cheese, shredded 3 cups
avocado, ripe, peeled, pitted, sliced 4 each
corn tortilla, 6-inch, warmed 24 each
cilantro, sprigs 1/2 cup

Directions:

  1. Heat oil over medium heat.
  2. Add onion. Sauté for 2-3 minutes.
  3. Add garlic. Cook for additional minute.
  4. Add black pepper, oregano, cumin and chipotle peppers. Cook for 3-4 minutes.
  5. Add chopped cilantro, chicken and chicken broth. Simmer for 5 minutes.
  6. Add Tomato Soup. Let simmer on low to medium heat for 20 minutes.
  7. Remove chicken breast from sauce. Pull into shreds. REturn chicken to sauce and reserve.
  8. Assemble each bowl in the following order:
    • 1 cup cooked brown rice
    • 1/2 cup tomato chicken mixture
    • 1/3 cup corn
    • 1/3 cup black beans
    • 1/8 cup shredded Monterey jack cheese
    • 3 slices of avocado
  9. To Serve: Garnish each bowl with 1 tortilla cut in 6 pieces and a sprig of cilantro. Serve immediately.

If you have corned beef at your restaurant, but you’re not serving Reuben sandwiches, I highly recommend you try them on your menu. Today, I’m going to show you two different ways to make a Reuben sandwich using corned beef.

I’ll make the classic version with sauerkraut, Swiss cheese, and Thousand Island dressing on rye bread. Then, alongside that I’ll make my personal favorite – a twist on the classic Reuben sandwich that substitutes pickled beet relish for sauerkraut. The sweetness of the beets pairs perfectly with the saltiness of the corned beef, and I just love beets!

Here are a few fun and approachable ways to present hash browns as the star of your menu.

  • Use as a plank style poutine presentation
  • Top crispy hash browns with pulled chicken + drizzle with buffalo aioli sauce and shower with blue cheese crumbles

Which also makes it far too easy to focus your St. Patrick’s Day menu on “the meats.” With that in mind, don’t overlook the simple, delicious, and truly green (no dye here) possibilities St. Patty’s presents for your menu. Finding creative opportunities for flavor and color in March puts more green on your menu and in your register! Green eggs for Breakfast and Brunch:

  • 1 cup cider vinegar
  • 2 oz EVOO
  • 3 clove garlic
  • 4 oz yellow onion rough chop
  • 1 cup fresh flat-leaf parsley
  • 1 cup fresh chives rough cut
  • 1 cup fresh cilantro
  • Salt & pepper to taste

Za’atar, the all-in-one green spice rub!

  • Heavily rub your burgers with it
  • Toss your wings in a generous amount of it
  • Mix it with ranch dressing for a fun dipping sauce
  • Mix a generous amount into sauerkraut for use on a Reuben sandwich
  • Make a cream sauce to use for chicken or shrimp pasta dishes

Eggplant, finding the beauty beneath the blemish.

Most of us purchase and use eggplant for traditional preparations, such as eggplant Parmesan, grilled and stuffed with ricotta for an Eggplant Roulade or perhaps even a breaded eggplant version of a French fry. But ultimately, there will come a time when you find a handful of eggplant within the case that are looking less than desirable. Speckled with blemishes & feel soft to the touch or skin that has turned a light tan color (and not the color tan you want to paint your walls with.) If you are purchasing a long slender variety, you may find the eggplant to be what can best be described as “limp” after some time. This however, is no reason to discard the ugly “eggplantlings” of the bunch.

Enter the world of Caponata. Eggplant Caponata is a traditional Sicilian eggplant-based condiment. Great served on grilled crusty bread, perfect and subtle enough to serve with seafood & yet complex enough to serve with beef or pork. Thus, making Caponata one of the most well rounded and diverse eggplant dishes you can add to your repertoire.

Tasty Ideas:

  • As an accoutrement on a cheese/charcuterie board
  • As an alternative to pizza sauce
  • Fold into a Hollandaise sauce for a creative twist on eggs Benedict
  • When roasting a whole chicken or turkey, place a generous amount under the skin to impart nice flavors to the flesh during the baking process.
  • Add to a risotto, along with a pinch of saffron for a great vegetarian menu offering, or for the base of a kick ass Osso Bucco.
  • Use as a condiment for an Italian deli sandwich; either straight up, mixed with mayo for an aioli or together folded into mustard for a unique sandwich condiment… eggplant mustard.
