This Green Peppercorn Crusted Strip Roast with Red Wine Sauce is a perfect dish for a romantic dinner or a special occasion. The green peppercorns and red wine sauce add a touch of elegance to the dish, making it a great choice for couples or Valentine’s Day offerings at restaurants.

Green Peppercorn Crusted beef cutThis upscale offering calls for a boneless beef Strip Loin (#24864) generously seasoned with green peppercorns, granulated garlic, kosher salt, freshly ground black pepper, and lemon peel. The roast is then cooked to perfection and served with a delicious red wine sauce.

The sauce… oh, the sauce!… is made with olive oil, cremini or button mushrooms, finely chopped shallots, beef broth, Cabernet Sauvignon, cornstarch, cracked black pepper, fresh thyme, and kosher salt. The combination of these ingredients creates a rich and flavorful sauce that perfectly complements the beef.

This dish is sure to impress guests with its sophisticated flavors and opportunity for an elegant presentation. Pair it with a nice Cabernet Sauvignon for a truly romantic experience. Bon appétit!

Serves 16

Ingredients
  • 1 boneless beef Strip Loin Roast (3-4 pounds)
Seasoning
  • 1 tablespoon green peppercorns
  • 2 teaspoon granulated garlic
  • 2 teaspoon kosher salt
  • 2 teaspoon freshly ground black pepper
  • 1 teaspoon lemon peel
Wine Sauce
  • 2 tablespoon olive oil
  • 4 ounces cremini or button mushrooms, sliced
  • 1/4 cup finely chopped shallots
  • 1 cup beef broth
  • 1 cup Cabernet Sauvignon
  • 1 tablespoon cornstarch
  • 1/4 teaspoon cracked black pepper
  • 1 teaspoon fresh thyme
  • kosher salt
Directions
  1. Preheat oven to 325°F. Combine Seasoning ingredients; press evenly onto all surfaces of beef Strip Roast.
  2. Place roast on rack in shallow roasting pan. Insert ovenproof meat thermometer so tip is centered in thickest part of beef, not resting in fat. Do not add water or cover. Roast in 325°F oven 1-1/4 to 1-1/2 hours for medium rare; 1-1/2 to 1-3/4 hours for medium doneness.
  3. Meanwhile prepare Wine Sauce. Heat olive oil in large nonstick skillet over medium heat until hot. Add mushrooms and shallots; cook and stir 6 to 9 minutes or until mushrooms are tender and browned. Remove from skillet; keep warm. Add 3/4 cup broth and wine to skillet; cook and stir over medium heat 12 to 16 minutes or until reduced to 1 cup. Combine remaining 1/4 cup broth and cornstarch in small bowl. Whisk cornstarch mixture and pepper into wine mixture; bring to a boil. Cook 1 minute or until sauce thickens, stirring occasionally. Remove from heat; add thyme and mushroom mixture. Season with salt, as desired.
  4. Remove roast when meat thermometer registers 135°F for medium rare; 145°F for medium. Transfer roast to carving board; tent loosely with aluminum foil. Let stand 10 to 15 minutes. (Temperature will continue to rise about 10°-15°F to reach 145°F for medium rare; 160°F for medium.)
  5. Carve roast into slices; season with salt, as desired. Serve with Wine Sauce.

Fresh clams are cooked in olive oil, shallots, garlic, white wine, and black pepper until they open. The clam stock, combined with Elite Major Clam Stock Base, creates an unbeatable sauce. Italian parsley adds freshness, and optional red pepper flakes provide heat. Serve clams over pasta, ladle the sauce, and garnish with parsley. Add Parmesan or Romano cheese, and serve with fresh crusty bread for an indulgent touch.

Ingredients:

  • 3 oz. Elite Major Clam Stock Base, #16595
  • 80 Each Fresh Clams
  • 3 TBSP Olive Oil
  • 1 1/4 Cups White Wine
  • 10 Cloves Minced fresh Garlic
  • 2 Each Minced Shallots
  • 1 Quart Clam Stock
  • 2 Lbs. Cooked Pasta (Linguini, Spaghetti, Fettuccine, etc.)
  • 1 1/2 Cups Fresh Chopped Italian Parsley
  • 1/2 Each (Optional)Zest of Lemon
  • (Optional)Red Pepper Flakes
  • (Optional) Fresh Grated Parmesan or Romano Cheese

Directions:

  1. Cook pasta al dente
  2. Rinse clams and be sure they are tightly closed
  3. Bring one quart of water to the boil and add clam base
  4. Set clam broth aside
  5. In a pot with a cover add olive oil and sauté (lightly) shallot and garlic
  6. Add clams, white wine, and black pepper
  7. Cover and cook until clams open. DO NOT force clams to open. If they do not open, discard them.
  8. When the clams are cooked, remove from pot and drain collecting all liquid
  9. Return liquid to pot and any ingredients that are loose
  10. Add half clam stock to pot (fresh clams can vary greatly in the amount of saltiness. Be sure and taste broth before adding all stock. If it is naturally salty do not add more clam broth)
  11. Return clams with 2/3 of fresh chopped parsley
  12. Add red pepper flakes, if desired, and toss
  13. Divide warm linguini into 10 soup plates.
  14. Lightly top pasta with fresh lemon zest if desired
  15. Divide clams between dishes and top with hot clam sauce
  16. Garnish dishes with remaining parsley
  17. Freshly grated cheese is optional, not traditional.

Ingredients:

  • 4 oz. Elite Major Beef Stock Base (Dennis #16607 or Low Sodium #16611)
  • 5 Lbs. Braising cut of Beef
  • 5 Each Carrots, peeled
  • 1 Each Leek, cleaned, trimmed
  • 1 Each Onion, peeled and cut in 10 wedges
  • 1 Each Fennel, cleaned and cut in 10 wedges
  • 5 Each Parsnips, peeled and cut in half lengthwise
  • 6 Each Potatoes, medium, peeled and quartered
  • 20 Each Cipollini Onions, peeled
  • 20 Each Garlic Cloves, peeled
  • 20 Each Shallots, peeled
  • 3 oz. Tomato Paste
  • 5 Cups Water
  • Salt
  • Pepper
  • Fresh Herbs
  • Olive oil for coating

Directions:

  1. Trim beef if necessary
  2. Coat beef with thin layer of beef base
  3. Let stand for at least two hours
  4. Lightly coat large roasting pan with oil
  5. Lightly coat vegetables with oil and salt and pepper
  6. Prepare pot of beef broth with remaining base and water and set aside
  7. Please beef in roasting pan and into 350°F oven
  8. Times vary depending on the cut and tenderness
  9. After about one hour and vegetables and roast mixing occasionally. Try not to break them up.
  10. When vegetables start to brown lightly add tomato paste, roast for 10 minutes
  11. Add fresh herbs to taste
  12. Add beef broth after this step, as needed
  13. Sauce should thicken naturally

Most popularly used in General Tso’s Chicken, Vanee General Tso Sauce holds up well to breaded proteins and Vegetables. It is perfect for wings, stir-fry, soups, dips, sauces, wraps, salad dressings, or apply directly as a glaze for all meats, chicken, seafood, or vegetables. Vanee General Tso Sauce is gluten free. Each 64oz jug has 67 two-tablespoon servings, for a total of 268 servings per case. The second sauce we added from Vanee is their Sweet & Sour Sauce. This gravy mix is perfect for smothering biscuits or breakfast skillets and is great for using as a base to create a signature sausage gravy. Vanee Country style gravy mix combines authentic flavor, texture, and appearance with superior performance, and is an easy and affordable way to quickly make large volumes of white gravy. The second mix we added from Vanee is Beef flavored gravy mix. Flavored Butters

One of the easiest and most convenient ways to add flavor to food is by mixing seasonings and other ingredients into butter, which can then be chilled or even frozen for later use. In addition to using on steaks and other proteins hot off the grill, these butters can be used to:

  • Sauté or dress vegetables
  • Slip under the skin of chicken before roasting
  • Include in a signature bread service
  • Offer with cornbread or muffins
  • Float on a bowl of soup
  • Top off a baked potato
  • Spread on grilled or toasted sandwich bread

Dressings as Marinades

Many dressings, particularly vinaigrettes, include an acidic ingredient such as vinegar or citrus juice, which also serves as a tenderizer in marinades. Other common dressing ingredients that tenderize proteins include honey and yogurt (think of tandoori marinade), which also aid in flavor-boosting caramelization when cooked.

Likewise, many marinades can be used as dressings for salads and other chilled foods—perhaps with the addition of an ingredient to make them more clingy, such as oil or mayonnaise.

Creamy Sauces

Creamy, relatively neutral-flavored sauces such as béchamel, Alfredo, and cream gravies have many uses in addition to adding a luxurious touch atop cooked foods.

  • In casseroles, shepherd’s pie, and pot pies
  • As a binding for meatloaf or meatball mixtures

  • To moisten a brunch-worthy egg strata
  • In a simmer sauce for pot roast, chicken fricassee, and other braised proteins
  • In quesadillas, instead of—or in addition to—cheese

Sauces = Spreads = Dips

Sauces are the true shape-shifters of the menu-making world. Depending on qualities such as flavor and thickness, a sauce can be used as-is or in additional uses such as a warm spread (for sandwiches, for instance) or a dip for finger foods.

Ingredients

  • 1 oz cabbage, chopped
  • 1 oz cucumber, chopped
  • 1 oz red pepper, small chop
  • 3 flour tortillas
  • 3 panko breaded fish fillets
  • 3 tbsp Boom Boom Sauce (Item #7827)
  • 2 fl oz pico de gallo
  • 1 Lemon wedge

Directions:

  1. Mix chopped Napa cabbage, cucumber, and red pepper together to make a slaw. Set aside
  2. Place fish in deep fryer until golden brown with an internal temperature of 145°F and drain.
  3. Place flour tortillas on flat top grill for 30 seconds on each side and remove to service plate.
  4. Fill each tortilla with 1 piece of fish, drizzle with 1 tablespoon of Boom Boom Sauce (KE1936) and top with 1 ounce of the freshly made slaw.
  5. Serve with a side of pico de gallo and a fresh lemon wedge.
