From spice lovers to flavor enthusiasts, these crowd-pleasing wings are a hit!

These succulent pork wings are marinated in an enticing blend of Gochujang paste, maple syrup, and soy sauce. The result? A harmonious balance of sweet, spicy, and savory flavors that will leave your customers craving more.

Serves 6

Ingredients
  • 24 Smithfield® Smoke’NFast Boneless Pork Wings
  • 9 tablespoons Korean Red Chile Paste (Gochujang)
  • 1 cup Maple Syrup
  • 3/4 cup Light Soy Sauce (divided)
  • 6 cups Napa Cabbage, shredded
  • 12 cups Hearts of Romaine Lettuce, shredded
  • 3 tablespoons Toasted Sesame Seeds
  • 1 bunch Green Onions, julienned (for garnish)
  • 3 tablespoons Toasted Sesame Seed Oil (divided)
  • 1 1/2 cups Rice Wine Vinegar (divided)
Directions
  1. In a bowl, combine 9 tablespoons of Korean Red Chile Paste (Gochujang), 1 cup of maple syrup, and 1/2 cup of light soy sauce. Mix well to create the marinade.
  2. Add the Smithfield® Smoke’NFast Boneless Pork Wings to the same bowl and coat them thoroughly with the marinade.
  3. Preheat your oven to 350°F. Place the marinated pork wings in the oven and cook them thoroughly, rotating occasionally to maintain a consistent texture.
  4. While the pork wings are cooking, prepare the salad. Shred the Napa cabbage and romaine hearts. In a separate bowl, mix 3 tablespoons of toasted sesame seed oil, 1 1/2 cups of rice wine vinegar, and 1/4 cup of light soy sauce. Toss the shredded cabbage and lettuce in this dressing.
  5. Assemble the salad on individual plates. Place the cooked pork wings over the salad.
  6. Garnish with julienned green onions and a sprinkle of toasted sesame seeds.
  7. Serve immediately and enjoy!

Feel free to adjust the spice level by adding more or less Gochujang paste according to your preference. Bon appétit! 🌶🥗

Effortless Elegance: Savory Pork Delight

Savor the simplicity of Fig and sage Pork Chops. Tender pork loin chops, seared and served alongside a flavorful sauce crafted from brandy-infused shallots, black mission figs, and fresh sage. This simple and quick dish offers a harmonious blend of sweet and savory, creating a great addition to any meal or menu.

Serves 6

Ingredients 
  • 4 Pork Loin Chops (8 oz each)
  • 4 Shallots, finely minced
  • 12 Traina™ Black Mission Figs, cut in half
  • 4 tsp Fresh Sage, chopped
  • 1/4 cup Brandy
  • 1 cup Chicken Stock
  • 12 Tbsp Butter, softened
  • Salt & Pepper, to taste
Directions
  1. Hard sear chop on both sides until internal temperature reaches
    135°F. Remove and let rest.
  2. Add shallot, fig, and sage. Quickly saute and deglaze with Brandy.
  3. Add chicken stock and cook until reduced by half and figs are softened.
  4. Pull from heat and slowly whisk in butter to thicken the pan sauce.
  5. Slice and plate chop, spoon sauce over and garnish with Sage.

INGREDIENTS

Pork Back Ribs, (2 1/2 to 3 pounds each), cut into 3- or 4- rib sections 2 whole
Sesame seeds, toasted (optional) 1 1/2 tsp
Hoisin Sauce 2 cups
Pineapple Juice 1 cup
Fresh ginger root, grated 3 Tbsp
Sesame Oil 3 Tbsp
Scallions, green only, thinly sliced (optional) 3

Directions:

    1. In a medium bowl, combine the hoisin sauce, pineapple juice, ginger, and sesame oil. Arrange the ribs in a slow cooker and pour half of the sauce mixture over the ribs. Cover and cook on low for 5 to 6 hours or on high for 3 1/2 to 4 hours, until the ribs are very tender. Set the remaining sauce aside in the refrigerator.
    2. About 1/2 hour before the ribs are done, remove the sauce from the refrigerator, to bring it to room temperature.
    3. Arrange the ribs on plates or a platter and brush both sides with some of the remaining sauce. Sprinkle with the scallions and sesame seeds, if using. Serve the rest of the remaining sauce at the table.

New this week, we added 32-ounce clear Safe-T-Fresh® bowls from Inline Plastics. These bowls come equipped with leak-resistant seals and a durable base, ensuring easy closing and long-lasting freshness. The recessed lid flange is protected by a blocking rail, making the bowls tamper evident. Each bowl is offered with a dome or shallow lid to perfectly secure your product.

From Smithfield Farmland, we received premium deli ham with 10% water added. They measure 4″x6″ and come cooked and refrigerated. Slice them as thick or as thin as you like – it’s perfect for sandwiches and subs, as well as any lunch or breakfast application you would like to add ham to. We also added sliced pepperonis from Fontanini. This sliced pepperoni is made from select pork and beef cuts, and measures approximately 15-17 slices per ounce. The authentic red brick color and unique cup and char appearance helps achieve that old world look.

Lastly, we have a variety of sauce cup flavors from Sauce Craft. Sauce Craft offers a wide range of on-trend sauces catered to deliver versatility and flavor to help shake up your menu. We added three flavors: Sweet Chili, Gochujang Korean Pepper, and Garlic Parmesan. Each sauce cup is 1.25 ounces, perfect for takeout orders and on-the-go eating. Gochujang Korean Pepper Sauce is a great option for the ultimate umami experience. It balances traditional gochujang fermented pepper paste with soy and garlic to create an authentic sweet, spicy and saucy spin on a classic.
