Coconut milk pairs well with all coffee and espresso and is perfect in darker roasts or summer beverages. This coconut beverage creates a smooth, glossy microfoam that’s perfect for latte art. Test it in one of your specialty drinks and let us know how your customers like it. The second plant-based beverage is Soy Original. Ingredients:
Ice
2 cups
Cold brew coffee
1 cup

Directions:

  1. Place ice, cold brew coffee, 2 oz. chocolate syrup and 1 oz. marshmallow topping in a stainless steel shaker tin. Shake vigorously until well blended.
  2. Rim a 16-ounce glass in remaining chocolate syrup and dip in graham cracker crumbs. Drizzle remaining marshmallow topping around inside of glass.
  3. Pour mixture into glass and top with toasted marshmallow. Serve immediately.

Hot beverages are the workhorse products of foodservice. They are profitable “must-haves” for just about every type of operation, be it the office kitchen, college, and hospital cafeteria, or the high-volume LSR and convenience store. But it’s easy to forget that these popular beverages don’t just sell themselves. They have to be menued, merchandised, and prepared with care. So, here is a primer of 10 things to keep in mind when selling hot beverages, starting with the most basic, and moving on from there.

1. A knowledgeable staff goes a long way. The quality of the hot beverage consistently ranks up there at the top when it comes to customer concerns.So, don’t skimp on training, especially in this time of hard-to-find workers. Staff should be well-trained in how to operate and maintain equipment and how to prepare fresh, quality hot beverages. Some tips: midday cups should be brewed fresh and not leftover from the early morning rush. And offering free hot water refills for tea goes a long way in building customer loyalty.

2. Let guests settle in for a long stay. One of the chief reasons patrons choose hot tea is for relaxation, says Datassential in its report “Buzz 2022, Annual State of the Category.” The report also says specialty coffee is mostly consumed away from home in social settings. Customers are more willing to order that second cup while hanging out with family or friends. So, providing an environment where they can sit back and relax could help increase sales.

3. A good selection of sweeteners and creamers is essential. These can be used by staff to create signature hot beverages or to allow guests to customize their coffee, tea, or cocoa to their liking. And make sure to include on-trend plant-based creamers. Almost 10% of creamer usage away from home is plant-based. The most popular: Almond, oat, soy, coconut, rice, and cashew, with coconut growing the fastest.1

4. Building a hot tea program requires attention, and work. It is one of those hot beverages consumed much more often at home.1Some tips: offer both popular and niche brands, pay special attention to an adequate sweetener and milk or creamer selection, and offer on-trend specialty offerings like matcha or chai.

5. Pair hot beverages with food. What’s better than a hot coffee, tea, or cocoa slowly savored by itself? One enjoyed with food, such as a snack or dessert. In fact, 30% of away-from-home hot brewed coffee occasions were consumed with food. And that increases to 40% for specialty coffee.1 Sweet desserts like brownies, cakes, or cookies are ideal choices here.

6. Embrace your inner pumpkin. Yes, it seems seasonal flavors begin earlier each year. But what’s not to love? It brings with it a lot of free publicity—and long lines. In fact, 4 of the top 20 most craveable items in December 2021 were holiday-themed coffee drinks.2 According to Technomic, “Successful items levied descriptions that exuded comfort and called on the traditionality of certain flavors, like baking spices, chocolate, caramel, and vanilla. These items also drew attention for their fun holiday names, such as Winter Dream Tea Latte (from The Coffee Bean & Tea Leaf) or Snowball Latte (from BIGGBY COFFEE).”

7. Hot cocoa is nice, especially on a chilly day, but take it further. Make it extra fun, for example, by serving on-trend hot chocolate bombs. They are hollow spheres of chocolate filled with cocoa mix, marshmallows, and add-ins such as sprinkles. Drop them into warm milk and they create an instant cup of hot cocoa. Or menu a Mexican Hot Chocolate. El Pollo Loco’s is made with Abuelita® chocolate, spiced with cinnamon and vanilla, topped with whipped cream, and dusted with cinnamon sugar.

8. Use your hot beverage program to drive traffic. A special promotion that gives back to your customers in one way or another can go over big. These can be reward programs or even hot beverage-themed celebrations that drive visits and, hopefully, impulse sales. For example, as school rolled around this year, Dunkin’ treated teachers to a free medium hot or iced coffee on September 1.

9. Include hot ciders. They can be a delicious addition to your hot beverage menu and are especially craveable during the fall months. Seen on menus: Caramel Apple Spice from Starbucks: Steamed apple juice complemented with cinnamon syrup, whipped cream, and a caramel sauce drizzle; Hot Apple Blast at Caribou Coffee: Apple cider steamed with flavors of caramel apple, and topped with whipped cream, caramel drizzle, and ground cinnamon; and Caramel Apple Cider at Paris Baguette. Another option is mulled apple cider, which is a sweet cider heated with spices and citrus fruits.

10. Differentiate your menu by including steamers. They forego main ingredients like coffee, and instead just play off steamed milk. But they can also be creative. Starbucks features several. including Pumpkin Spice Crème, combining steamed milk with flavors of pumpkin, cinnamon, nutmeg, and clove, then topped off with whipped cream. And even more basic is their Steamed Milk, which the company describes as “a warm cup of skim, 2%, soy, almond, or coconut milk steamed for your sipping pleasure.”

Hot Beverage Facts:

  • Most popular hot beverage additives: Creamers, 61%; Sweeteners, 36%; None, 26%.1
  • Medium roast is the most common coffee roast type, followed by dark.1
  • Salted Caramel is Technomic’s LTO Hot Beverage Trend to Watch. Appearing in lattes and hot chocolate, the caramel adds extra indulgence to beverages, while the salt helps balance the sweetness.3

For all your coffee-loving customers out there, try the new Reddi-Wip sweet cream foam. This delicious coffee topper is packaged in Reddi-Wip’s classic aerosol can for little-to-no labor without jeopardizing taste and appearance – adding a smooth, creamy texture to your coffee. From Hormel, we added frozen pork sausage rolls made with the highest quality pre-rigor pork and seasoned with a special blend of spices.  This sausage delivers a delicious flavor with a fork-tender texture and crumbly bite. If you’re looking for more plant-based options, try the breaded eggplant cutlets we just added from Bernardi and Vertullo Imports. Choose from a traditional round cut or go for a long rectangular cut depending on your dish. These are great for vegetarian sandwiches and eggplant parmesan.

Next up, we have Deep Dish Pizza Singles from Red Baron. Mozzarella, provolone, cheddar, and parmesan cheeses are perfectly blended and melted on top of a robust tomato sauce and golden deep dish crust. These frozen 4-cheese pizzas are 5 inches in diameter, individually wrapped and simply need to be heated and they are tasty and ready to serve. From Green Street, a new plant-based brand from Tyson, we added roasted garlic hummus bites. Delicious and creamy hummus filling coated in a crispy falafel breading is the perfect plant-based appetizer to add to your menu, and pair great with a wide range of dipping sauces.

Spice is all the craze these days, and the spicy pepperoni from Bonici can add the right amount of spice to pizzas and sandwiches that your customers have been looking for. This product comes frozen and pre-sliced for longer shelf life and less labor. Lastly, try the new all-natural chorizo crumbles from Hillshire Farms. The pieces are in a variety of shapes and sizes for a more homemade look, and arrive fully cooked for better efficiency and speed for your back-of-house and food operations. It cooks great in pizza and conventional ovens, flattop grill and stove top.

There are lots of new items this week! From La Française French Bakery, we added delicious flaky sliced croissants, offered in butter and margarine. We also added white all-natural pizza dough balls from The Dough Co. right in Lewiston, Maine; available in 6 or 10 oz. dough balls. Speaking of Maine, try some of the new coffee blends we just got in from Carrabasset Coffee Company, another Maine-made brand – both the Sunrise Breakfast Blend and Jamacia Me Crazy are light roasts with bold flavor.

With summer (and Cinco de Mayo) right around the corner, we knew we had to stock up on the margarita necessities. From Mayson’s, we added margarita mixes and fruity purées in a variety of flavors. With the mix you can go frozen or on the rocks, and elevate it with the strawberry, raspberry, peach or watermelon purée for an added delicious flavor. For a perfect on-the-go condiment, grab some premium mayonnaise packets from Ken’s; great for takeout or outdoor dining. We also added Upper Crust® fine Japanese-style breadcrumbs that provide an all-around better crisp to your fried foods and does not clump up – a great alternative to standard American or Italian-style breadcrumbs.

From Jennie-O, we added all-natural pulled white meat turkey. Being fully cooked and with no salt added, it is a perfect base to add your own flavor and customize it to your desired dish, from salads to casserole to soup. For seafood lovers, try breaded mini popcorn shrimp from Mariner Jack®. These shrimp are peeled and undeveined with the tail off, coated in batter and breadcrumbs and individually quick frozen for portion convenience and cooks up in minutes.   From Excel®, we got select beef chuck rolls, neck-off. Coming from shoulder and rib area, this cut of meat is great for stews, stir frys, ground beef and more.

Lastly, for our nonfood items, we added Companions™ Essentials Stretch Hybrid Gloves in multiple sizes – medium, large, and extra large. These powder-,latex-, and vinyl-free gloves are ideal for numerous tasks. By sizing down one size, this new glove will provide you a tight,”second-skin” fit. Each glove is produced with a unique diamond pattern texture that allows the user to fully grasp even the smallest ware in any kitchen.

“Old” coffee still has many useful applications regardless of the altered flavor profile.

For many food service operations coffee is hands down one of the highest food cost items that we consistently waste on a daily basis. Even though each brew comes at a premium it tends to be the item that usually gets poured down the drain at the end of every service; to be replaced by a fresh pot for the next shift. When it comes to serving fresh coffee “out with the old & in with the new” is necessary. As business operators it is also necessary to think creatively to recoup otherwise wasted product. In this case the excess pour off that subsequently costs you money.

Do the math: If you pay $50.00 per case of coffee (which is a very low estimate – I’ve paid upwards of $150.00+ per case of coffee) and your drain pour is 10%, your essentially pouring $5.00 down the drain. If you use 4 cases of coffee per week your drain pour could be as high as $1040.00 per year! Yes, some operations use far less coffee while others use far more; the point is that reinventing an already prepared product is reinvesting in your business. Plus! It’s a chance for you to show your foodie prowess!

Being crafty with Joe:

  • 1 gal coffee + 2 cups sugar + 1 cinnamon stick + low and slow reduction = coffee syrup
  • Use coffee syrup in desserts, or as a dessert garnish
  • Use coffee syrup in a cocktail…coffee martini with rosemary ash on the rim of the glass
  • Marinate beef in a mixture of leftover coffee (chilled coffee) + garlic + herbs + balsamic + S&P
  • Add coffee to your pork belly brine
  • Transform into a JoeBQ sauce (bbq sauce with coffee)
