  • 16 oz. Unsalted Butter
  • 2 Quarts Water
  • 1/4 Cup 22263 Elite Major Signature Beef Stock Base, No MSG Added 00073292222634
  • 1 Cup Worcestershire Sauce
  • 1/2 Cup Soy Sauce
  • 2 Cups Bourbon
  • 2 TBSP Black Pepper, Table Grind
  • 2 Cups Tomato Juice
  • 1/4 Cup Lemon Juice, Fresh

Directions

  1. Melt butter in large, nonreactive soup pot
  2. Dissolve Major Beef Base in water. Add to pot
  3. Stir Remaining ingredients into pot
  4. Simmer for 10-15 minutes
  5. Inject up to 10% of the weight of the brisket or roast the night before
  6. Use a mop or spray sauce during roasting or smoking. Hold warm to prevent butter from solidifying

Consumers are continuing to broaden their palates. And with specialty barbecue comes a wide range of flavors that go beyond regional favorites and expand across the globe to places like Africa, South America and Southeast Asia. 36% of consumers are ordering ethnic foods or food with ethnic flavors at least weekly.1

The popularity of barbecue is also impacting the types of proteins your customers enjoy. Traditional meats, like beef and pork, will always be barbecue staples. INGREDIENTS
Serves: 4

1 tablespoon of butter
1/2 cup of diced onions
1 diced bell pepper (red, yellow, orange or green)
8 beaten eggs
2 cups shredded BBQ beef
1 cup of shredded pepper jack cheese
4 (8”-9”) flour tortillas

DIRECTIONS

  • In large skillet over medium high heat, melt butter. Add diced onions and peppers. Sauté vegetables 5 minutes or until tender, stirring often.
  • Heat shredded BBQ beef to desired temperature.
  • Add eggs to vegetable mixture. Gently cook and stir until eggs are soft scrambled. Add salt and pepper to taste. Sprinkle bacon and cheese on top.
  • Spoon egg mixture down center of each tortilla. Spread 1/2 cup of shredded BBQ beef over eggs and roll up, tuck in ends, and serve.

Menuing this hearty wrap saves the day! Seriously though, the flavor combinations in this brunch dish are sure to impress.

INGREDIENTS
Serves: 6

6 eggs
1/2 finely chopped green bell pepper
16 ounces seasoned shredded BBQ pork
6 10-inch tortillas
1 1/4 shredded cheddar cheese
1 cup milk
1/4 teaspoon salt
2 tablespoons butter
Pinch of ground black pepper.

DIRECTIONS

PREP

  • In a medium bowl, whisk together eggs, bell pepper, milk salt and pepper.

COOK

  •  Meanwhile, prepare seasoned shredded pork to desired temperature.

SERVE

  •  Stack tortillas and wrap in microwave-safe towels. Microwave on HIGH (100% power) for 1 minute or until heated through. Divide egg mixture among tortillas, spooning it just below the center of each tortilla.
  • Top eggs with shredded pork; sprinkle with cheese. Fold bottom edge of each tortilla up and over filling, fold in opposite sides, and roll up from the bottom.
