These unique burgers are topped with the flavors of Thailand: peanut butter, lime juice and hoisin with the crunch of cabbage.

Servings: 4

INGREDIENTS:

  • 1 pound Ground Beef (93% lean or leaner)
  • 1 cup shredded Napa cabbage
  • 2 tablespoons fresh lime juice, divided
  • 1/2 cup chopped green onions
  • 1 teaspoon ground ginger
  • 1 teaspoon hot chili sauce
  • 1 tablespoon creamy peanut butter
  • 1 tablespoon hoisin sauce
  • 1 teaspoon toasted sesame oil
  • 4 whole wheat or white hamburger buns, split

DIRECTIONS

  1. Combine cabbage and 1 tablespoon lime juice in medium bowl; set aside.
  2. Combine Ground Beef, green onion, ginger and chili sauce in medium bowl, mixing lightly but thoroughly. Lightly shape into four 1/2-inch thick patties.
  3. Heat nonstick skillet over medium heat until hot. Place patties in skillet; cook 10 to 12 minutes until instant-read thermometer inserted horizontally into center registers 160°F, turning occasionally. Season with salt and pepper, as desired.
  4. Meanwhile, combine peanut butter, hoisin sauce, remaining 1 tablespoon lime juice and sesame oil in small bowl. Cover and refrigerate until ready to use.
  5. Place 1 burger on bottom half of each bun; top evenly with peanut butter mixture and cabbage mixture. Close sandwiches.

Cook’s Tip: Hot chili sauce, an Asian condiment made from red chilies, garlic and vinegar, imparts a tangy, spicy heat to dishes. Hot chili sauce is available in Asian markets and the Asian section of most supermarkets.

Asian flavors are big, bold, rich in flavor, spicy, and vibrant, and above all, they are some of my favorite flavors to utilize. This flavor-forward Asian-inspired peanut soy glaze is super simple to make, holds well (under refrigeration) when bulk prep is a necessity, and can be used on a wide array of products. I chose Hormel’s Fire Braised Beef Short Rib for this application; however, this glaze can be used on chicken, seafood, pork, tofu, and vegetables. Watch and see how effortlessly you add Asian-inspired flavors to your menu.

Additional applications for the peanut soy glaze:
On grilled shrimp. With seared salmon. Tossed with roasted carrots. Slathered on chicken wings. Basted on a whole rib roast, pork loin, or pork chops. And it can even be used as a salad or slaw dressing.

Comfort food can’t get much better than this flavor-filled noodle bowl, which incorporates chicken thigh meat, shiitake mushrooms and your favorite Asian spices. Serve with hot sauce on the side for those who enjoy a little kick.

INGREDIENTS

Boneless Skinless Chicken Thighs 1 1/2 lbs
Olive Oil 1 Tbsp
Chinese Five-Spice Powder 1/4 tsp
Salt 1/4 tsp
Pepper 1/8 tsp
Minced Fresh Garlic 1 Tbsp
Grated Ginger 1 Tbsp
Chicken Stock 1 Tbsp
Soy Sauce 1 Tbsp
Sugar 2 tsp
Dried Shiitake Mushrooms, soaked in boiling water for 20 mins. 1 oz
Baby Boy Chow, cut in half 4
Eggs, hard-boiled and cut in half 4
Nests of Dried Ramen Noodles, cooked (2 oz) 4
Sliced Scallions 4 Tbsp
Sriracha Sauce For Serving
Lime Wedges For Serving

Prep Time: 45 Minutes         Cook Time: 40 Minutes

Directions:

  1. Sauté – Heat 1 Tbsp olive oil in large saucepan or Dutch oven over medium-high heat. Season chicken with Chinese five-spice powder, salt, and pepper. Sauté chicken thighs 5 to 7 minutes per side, until chicken is browned. Transfer chicken to plate. When cool, slice thighs into strips.
  2. Simmer – Remove all but 1 tsp oil from Dutch oven and heat over medium-high heat. Add garlic and ginger, and sauté until fragrant, about 30 to 45 seconds. Add chicken stock, soy sauce, and sugar. Remove stems from shiitake mushrooms, slice into strips and add to broth. Bring to boil, reduce heat and simmer 10 minutes. Add baby boy chow and sliced thighs to broth and simmer about 5 minutes or until boy chow is under and chicken is cooked through.
  3. Serve – Divide cooked ramen noodles into 4 bowls. Ladle in broth. Add mushrooms and box chow from broth. Top with sliced chicken, scallions, and hard-boiled eggs. Serve with sriracha sauce and lime wedges on the side.

Ingredients

Steak-EZE® BreakAway® Sirloin Beef Steak 1 (4 oz.) portion
Sesame Oil 2 tsp.
Water 2 cups
Chicken broth 4 cups
Yellow miso 1 cup
Soy sauce 2 tbsp.
Brown sugar 1 tsp.
Soba noodles 8 oz.
Carrot, peeled & julienned 1 medium
Radish, thinly sliced ¼ cup
Bok choy, chopped ¼ cup
Green onion, chopped 1 tsp.

Directions

  1. Heat sesame oil on flattop and cook beef until fully cooked. Remove from heat and set aside.
  2. In stock pot, add water, chicken broth, miso, soy and brown sugar, heat until ingredients dissolve.
  3. Bring broth to a boil and add soba noodles. Cook for 2½ minutes.
  4. Add vegetables and beef until noodles are tender.
    (About 3 minutes)
  5. Serve in bowl, garnish with green onions.

INGREDIENTS

  • 1 tablespoon vegetable oil
  • 1 1/4lbs beef flat iron steak, cut into very thin 1 1/2″ strips
  • 1/2 cup Korean BBQ stir-fry sauce
  • 1 teaspoon cornstarch
  • 1 tablespoon water
  • 1 tablespoon sriracha sauce
  • 8 flour or corn tortillas, warmed
  • 1 1/4 cups kimchi, drained and chopped, sour cream, chopped cilantro, radishes and/ or cucumber if desired

DIRECTIONS

    1. Heat oil in large skillet over medium-high heat. Carefully, add beef to hot oil. Cook and stir 2-3 minutes or until only a trace of pink remains.
    2. Add 1/2 cup stir-fry sauce to skillet. Cook 1-2 minutes or until hot. Push beef to side of skillet.
    3. Combine cornstarch with 1 tablespoon water; stir into cooking juices in skilled. Stir in sriracha. Cook 1 minute or until slightly thickened.
    4. Stir in beef and heat. Serve beef in tortillas topped with additional stir-fry sauce. If desired, also top with kimchi, sour cream, radishes/ cucumber. Serve!

INGREDIENTS
Serves: 100

  • 12 lbs sausage crumble or sausage alternative
  • 9.4 lbs cooked, shelled edamame
  • 100 cups cooked whole grain spaghetti
  • 10.3 lbs raw broccoli florets
  • 7.5 lbs chopped, raw green onions
  • 3.5 lbs sliced, raw bell peppers
  • 8 cups prepared sweet chili sauce
  • crispy wonton strips

DIRECTIONS

    1. Cook noodles until al dente and drain. Set aside.
    2. Steam broccoli and peppers until crisp and tender.
    3. Mix steamed broccoli, peppers and edamame with raw green onions and sweet chili sauce. Set aside.
    4. Bring sausage crumbles to temperature.
    5. Layer one cup of pasta at the bottom of the bowl.
    6. Scoop 3/4 cup vegetable mixture on top of pasta.
    7. Scoop 2/3 heated crumbles and place on top.
    8. Garnish with crispy wonton strips.
    9. Instruct students to “be the chef” and mix their own bowl.

1 serving provides: 2 oz meat/ meat alternative, 2 oz grain, and 1/4 cup GV, 1/8 cup OV, 1/8 cup RV.

  • 2 tbsp roasted red peppers
  • 1 ea sunny-side egg
  • 1 tsp chopped chives

DIRECTIONS

  1. Place focaccia on a pan and top with Salsa Roja, cheddar cheese, sausage, bacon and roasted peppers.
  2. Bake at 400˚F until cheese melts.
  3. Remove and top with sunny-side egg, drizzle of Salsa Roja and chopped chives, and serve!
