Heat Meets Meat: Fiery Jalapeño Popper Burgers for Bold Taste Buds

Sink your teeth into a juicy beef patty, perfectly seasoned and graced with melted Brighton Farms® American Pepper Jack Cheese. But the real star? Those stuffed jalapeño halves, oozing with a creamy blend of Brighton Farms® Cream Cheese, minced garlic, and zesty lemon pepper seasoning. Topped with crisp lettuce, ripe tomato, and creamy guacamole, this burger is a spicy, cheesy, and utterly irresistible delight! 🌶🔥🍔

Serves 8

Ingredients
  • 6 oz Brighton Farms® Cream Cheese (equivalent to 3 oz per serving)
  • 8 slices Brighton Farms® American Pepper Jack Cheese
  • 6 Jalapeño Peppers, halved and seeded
  • 2 tsp Olive Oil
  • 12 slices Bacon, crumbled
  • 4 Garlic Cloves, minced
  • 2 tsp Salt
  • 2 tsp Lemon Pepper Seasoning
  • 1 tsp Pepper
  • ½ tsp Paprika
  • 2 lbs Ground Beef (adjust seasoning as desired)
  • Lettuce, Tomato, and Guacamole for garnish
Directions
  1. Brush jalapeños with oil and grill covered over medium heat for 3-5 minutes or until tender. Once cool, chop finely.
  2. Combine finely chopped jalapeños with bacon and cream cheese.
  3. In a large bowl, combine garlic, salt, lemon pepper seasoning, pepper, and paprika and mix into beef.
  4. Shape into 8 thin patties.
  5. Spoon bacon/cream cheese/jalapeño mixture onto 4 of the patties, cover with remaining 4 patties, and press edges firmly to seal.
  6. Grill burgers covered over medium heat or broil 4 inches from heat for 6-7 minutes on each side until temp. is 160°F.
  7. Top with Pepper Jack Cheese and cook 1-2 minutes longer until cheese is melted.
  8. Serve on a grilled bun, and top with lettuce, tomato, and guacamole as desired.

This vegetarian bowl is downright delicious and packed with flavor. With roasted cauliflower, Kale & Quinoa Blend, Corn & Black Bean Fiesta Blend, fresh cucumbers, pickled red onions pico de gallo, Extreme Supreme Guacamole, and topped with a creamy dressing, Cotija cheese, and fresh cilantro.

Yield: 5 Servings

INGREDIENTS

Simplot Harvest Frest™ Avocados Extreme Supreme Guacamole, Frozen 1 pouch
Red Onions, halved and thinly sliced 1 each
Red Wine Vinegar 1 1/2 cups
Sugar 2 Tbsp
Kosher Salt, divided 2 Tbsp
Greek Yogurt, plain 15 oz
Mexican Crema 15 oz
Simplot Simple Goodness™: Cauliflower, IQF 12/2 lb 1 bag
Olive Oil 1/4 cup
Black Pepper, coarse grind 1 1/2 tsp
Simplot RoastWorks® Flame-Roasted Corn and Black Bean Fiesta Blend 6/2.5 lb 1/2 bag
Simplot Good Grains™: Ancient Grains and Kale Blend 6/2.5 lb 1 bag
Cucumber, shaved or thinly sliced 10 oz
Cojita Cheese, crumbled 5 oz
Cilantro Leaves 1/4 cup

Directions:

  1. Thaw guacamole overnight in the refrigerator.
  2. Place onions in a non-reactive container. Bring the vinegar, sugar, and 1 Tbsp salt to a boil. Pour over the onions to cover. Transfer to the refrigerator and store overnight. Whisk together yogurt and crema until smooth Store refrigerated.
  3. Preheat oven to 425˚F.
  4. Line a half-sheet pan with foil. Evenly spread the cauliflower on the pan. Drizzle with olive oil, and sprinkle with 1 Tbsp salt and pepper. Bake for 15-20 minutes or until slightly charred.
  5. Prepare the fiesta blend and grain blend according to the package directions. Reserve warm.
  6. For each serving: Place 8 oz grain blend in a serving bowl. Top with 5 oz of cauliflower, 4 oz fiesta blend, 3 oz guacamole, and yogurt crema, 2 oz cucumber and red onion, 1 oz cheese and garnish with cilantro.

From Revel Eats, we’ve added two new appetizer options. Guacamole Bites and Queso Loaded Tots. Revel Eats Guacamole Bites are a new twist on a familiar favorite! Crispy tortilla chip breading filled with smashed avocados, diced tomatoes, onion, jalapeño peppers, cilantro, and lime juice. The Queso Loaded Tots are a great potato filled treat with a blend of queso fresco and other savory cheeses, jalapeño peppers and bacon in a crispy, tortilla chip coating.  Both of these items have menu versatility and can be used as an appetizer, side, or topper.

From Sunny Fresh, we’ve added Whole Grain Cinnamon Glazed French Toast. These whole slices of whole grain french toast are dipped in egg and sweetened with a cinnamon sugar glaze. hybrid chicken peach creatureWell, grilled chicken AND grilled peaches that is. Shell-less taco? That’s right! It’s all the fun of a handheld taco with the fresh benefits of a salad! Tacos are hands down one of my favorite food groups; tied with dairy of course. That said, I am always finding ways to eat my foods taco-style without feeling like I’m eating tacos every day. Which is not a horrible thing; just saying. Enter the lettuce cup shell-less taco–a fun way to fuse your love of tacos with your body’s need for roughage.

INGREDIENTS

  • 4 oz grilled, diced, bonless chicken breast 1/4″
  • 4 fl-oz Kogi salsa roja
  • 1/2 teaspoon canola oil
  • 2 ea 10″ flour tortilla
  • 3 ea cooked, sliced 1/4″ smoked bacon
  • 1 tablespoon chopped, fresh jalapeno
  • 1 oz shredded, cheddar jack cheese
  • 1 teaspoon fresh lime juice
  • 1 tablespoon chopped fresh cilantro

DIRECTIONS

  1. Rub chicken breast with small amount of salsa roja and grill to 165˚F internal temperature.
  2. Heat oil on grill or large saute pan and evenly spread remaining salsa roja on tortilla.
  3. Continue building quesadilla with chicken, bacon, tomatoes, cheese, jalapenos and lime juice.
  4. Top with second tortilla and flip to finish grilling. Cut into 4 even wedges and serve! Optional additions, guacamole and sour cream.

These steak and egg breakfast tacos topped off with guacamole, sour cream and salsa will give your AM crowd a dish to rave about all day long!

INGREDIENTS

Serves: 6

1 beef top sirloin steak boneless, cut 3/4 inch thick (about 12 ounce)
2 teaspoons vegetable oil
6 small flour tortillas, warmed
6 eggs, beaten or 1 1/2 cups egg substitute
6 tablespoons reduced-fat shredded cheddar cheese
6 tablespoons guacamole
6 tablespoons salsa
6 tablespoons reduced-fat dairy sour cream

DIRECTIONS

  1. Heat large, heavy non-stick over medium heat until hot. Season beef top sirloin steak with salt, as desired. Place beef in skillet. Pan-broil until desired doneness, turning occasionally. Remove beef from skillet. Set aside; keep warm.
  2. Heat oil in same skillet over medium heat until hot. Add eggs and scramble until set, stirring occasionally; keep warm.
  3. Carve steak into thin slices. Top each tortilla with equal amounts of eggs, steak and 1 tablespoon each of cheese, guacamole, salsa and sour cream.
