Green Peppercorn Crusted beef cutThis upscale offering calls for a boneless beef Strip Loin (#24864) generously seasoned with green peppercorns, granulated garlic, kosher salt, freshly ground black pepper, and lemon peel. The roast is then cooked to perfection and served with a delicious red wine sauce.

The sauce… oh, the sauce!… is made with olive oil, cremini or button mushrooms, finely chopped shallots, beef broth, Cabernet Sauvignon, cornstarch, cracked black pepper, fresh thyme, and kosher salt. The combination of these ingredients creates a rich and flavorful sauce that perfectly complements the beef.

This dish is sure to impress guests with its sophisticated flavors and opportunity for an elegant presentation. Pair it with a nice Cabernet Sauvignon for a truly romantic experience. Bon appétit!

Serves 16

Ingredients
  • 1 boneless beef Strip Loin Roast (3-4 pounds)
Seasoning
  • 1 tablespoon green peppercorns
  • 2 teaspoon granulated garlic
  • 2 teaspoon kosher salt
  • 2 teaspoon freshly ground black pepper
  • 1 teaspoon lemon peel
Wine Sauce
  • 2 tablespoon olive oil
  • 4 ounces cremini or button mushrooms, sliced
  • 1/4 cup finely chopped shallots
  • 1 cup beef broth
  • 1 cup Cabernet Sauvignon
  • 1 tablespoon cornstarch
  • 1/4 teaspoon cracked black pepper
  • 1 teaspoon fresh thyme
  • kosher salt
Directions
  1. Preheat oven to 325°F. Combine Seasoning ingredients; press evenly onto all surfaces of beef Strip Roast.
  2. Place roast on rack in shallow roasting pan. Insert ovenproof meat thermometer so tip is centered in thickest part of beef, not resting in fat. Do not add water or cover. Roast in 325°F oven 1-1/4 to 1-1/2 hours for medium rare; 1-1/2 to 1-3/4 hours for medium doneness.
  3. Meanwhile prepare Wine Sauce. Heat olive oil in large nonstick skillet over medium heat until hot. Add mushrooms and shallots; cook and stir 6 to 9 minutes or until mushrooms are tender and browned. Remove from skillet; keep warm. Add 3/4 cup broth and wine to skillet; cook and stir over medium heat 12 to 16 minutes or until reduced to 1 cup. Combine remaining 1/4 cup broth and cornstarch in small bowl. Whisk cornstarch mixture and pepper into wine mixture; bring to a boil. Cook 1 minute or until sauce thickens, stirring occasionally. Remove from heat; add thyme and mushroom mixture. Season with salt, as desired.
  4. Remove roast when meat thermometer registers 135°F for medium rare; 145°F for medium. Transfer roast to carving board; tent loosely with aluminum foil. Let stand 10 to 15 minutes. (Temperature will continue to rise about 10°-15°F to reach 145°F for medium rare; 160°F for medium.)
  5. Carve roast into slices; season with salt, as desired. Serve with Wine Sauce.

From Gourmet Table, we added four different condiment options. The first condiment is Sweet and sour sauce cups. These cups are great to go with traditional fast food like chicken nuggets, tenders, or French fries. Customers will love dipping classic finger foods in this thick and sticky-sweet sauce for a delicious glaze of flavor. The second is BBQ Sauce Cups. These BBQ Sauce cups will pack a punch of bold, smoky flavor to your customers’ favorite foods. This country sweet and slightly spicy barbecue sauce can be used as a classic dipping sauce, or give any pork BBQ sandwich an extra kick of flavor. The third condiment is a single serve mayonnaise packet. This shelf-stable mayonnaise is made with high quality ingredients to bring great tastes to salads and sandwiches. The final new individual condiment is Taco Sauce Pouches. Seasoned with traditional Mexican spices, this tasty taco sauce will deliver just the right amount of bold flavor to your customers’ food. These new portion cups and packets are ideal for delis, restaurants, concession stands, and convenience stores. They can help control costs, keep the product fresh, and reduce waste from unused product.

From General Mills®, we added two single serve cereal cups; Honey Cheerios is a sweetened, whole grain cereal, with a touch of real honey. Trix is a fruit flavored, sweetened corn puff cereal that contains only 6 grams of sugar, no gelatin,  no colors from artificial sources and no high fructose corn syrup. These whole grain cereals come in convenient cups that leave room milk. These ready-to-eat cups provide single serve portion control and are ideal for c-stores, hotel continental offerings, and school cafeterias.

From Zee Zees, we added Ranch Cruncherz Roasted Chickpeas. When you mix one of America’s favorite seasonings with Zee Zees, you get Ranch Cruncherz Roasted Chickpeas! Chickpeas are a good source of protein, fiber, and various essential nutrients, making them a nutritious choice for a snack. These chickpeas are roasted to achieve a crunchy texture. Roasting no only enhances their flavor but also provides a satisfying crunch that makes them enjoyable to munch on. When your customers crunch on these protein-packed, plant-based snacks, with a zesty flavor, they’ll be reaching for more.

And finally, from Tyson, we added Marinated Black and Gold Ranch Cut Steak. This frozen beef shoulder center cut steak is marinated with seasonings for a distinct flavor and can be cooked to make a satisfying entree addition to your menu offerings. It is vacuum-packaged to preserve freshness and lock in flavor. This ready-to-cook steak is suitable for restaurants and comes conveniently individually portioned into 8 oz steaks.

Tender sliced steak and bacon on a hand-tossed artisan crust with a rich, creamy asiago alfredo sauce.

 

 Ingredients
Rough Chopped Bacon 2 oz
Steak-EZE Redi Steak, Cooked 4 oz
12″ Artisan Crust 1 ea
Asiago Alfredo Sauce 5 oz
Mozzarella Cheese, Shredded 8 oz
Parsley, Fresh Chopped 2 Tbsp

Directions:

  1. Place crust on an oiled pizza or wire screen. Spread out the Asiago Alfredo sauce, then evenly distribute the cheese. Top with rough chopped bacon bits and cooked & chopped steak.
  2. Bake in a preheated 500°F impinger oven for 5 minutes.
  3. Garnish out of the oven with fresh chopped parsley.

Yield: 1 pizza

We brought in lots of great non-food and takeout items this week! From Lacerta Group, we added the 16-ounce 4 compartment snack pack. Each compartment is 4-ounces each, and the container is made with a tamper-evident tear strip to lock in freshness and prevent multiple people from touching/handling your customer’s food. From Berkley, we have two varieties of white soda spoons – wrapped or unwrapped. Their small scoop and long, thin handle makes these spoons great for stirring drinks or adding to your summer ice creams, milkshakes, and Hawaiian shaved ices. They are both also medium weight to help prevent snapping or breaking from hard-serve ice creams.

Next, we have panko chicken tenders from Brakebush. The tenders are NAE (Never raised by Antibiotics Ever) and arrive uncooked and coated in a crispy golden brown panko breading with toasted highlights. Simply fry at 350°F for 3-4 minutes for great-tasting chicken tenders with a delicious crunch; great as a finger food, appetizer, snack, or school lunch. From Advance, we added beef salisbury steak. This steak brings classic home-comfort flavors while also allowing for easy prep and low labor. Every case comes with 4-ounce frozen portioned slices to ensure consistency for each serving. We also added frozen beef ribeyes.

For your condiment needs, try the marinara sauces cups we just brought in from Red Gold. These 2.5-ounce cups allow you to get rid of side sauce prep, and are the perfect compliment to your pizzas, breadsticks, mozzarella sticks and much more. They are especially great for takeout orders for pre-portioned sizes and easy visibility. Lastly, we have clear 5.5-ounce cups from Berkley. These cups are made out of a clear plastic, and their small size makes them great for menu samples and meal sides such as pasta or potato salad.

Technically there is no “red meat season”, but if I had to pull one out of thin air, the kickoff would be July.

Summer is the season for grillin’, chillin’ and letting your internal carnivore come to the dinner party.

What did the perfectly-rested steak say to the prematurely-sliced steak?
You need a rest… you’re bleeding.

“What cut should I use?”

There is no good answer. I could tell you what cuts of beef you should use & those you should steer clear of – however, it is simply a matter of personal likes vs. product use vs. your grocery budget. Other considerations include how you will be using the product. Will you be using a slow cooking technique, like braising or smoking? Are you going for a quick seared steak presentation? Will you be roasting and shaving for sandwiches? Once a clear path of production/use has been paved, your account executive (or myself) can better assist in steering you in the right direction.

There is no bad cut of beef, but there is improper product handling that can lead to unsatisfactory finished product. The rule of thumb is to choose heavily used muscles (higher use of muscle + stronger protein structure with less marbling) for longer cooking methods, such as slow smoking, braising and slow roasting. On the opposite side, a lesser used muscle (better marbling due to muscle inactivity) is suitable for quick cook techniques such as grilling, searing and slow roasting.

Be sure to place careful consideration when choosing the perfect cut for your platform. Beef is a big expense, so don’t overspend on a tender cut if you plan to treat it like a tough cut. On the flip-side, don’t use a tough cut like a tender cut and expect a suitable outcome.

If you choose wisely, season well and use proper cooking techniques, you will be hitting menu home runs all day long.

From Merkts, we added beer cheddar cheese spread. Made from Wisconsin craft beer, this spread is perfect for dipping pretzels in or spreading on crackers. From UniPro, we added corn starch – a staple for any kitchen. Lastly, from PrimeWare we have 9″ round paper plates with 3 compartments. These plates are eco-friendly and allow your customers to separate their food how they please.

From Ken’s®, try adding the mayonnaise packets to your inventory – creamy full-body flavored white mayonnaise in small convenient packets makes this item perfect for takeout orders. For something a little more fishy, try the clam strips we added from Sea Watch. These strips are made exclusively from the Atlantic Surf Clam and are shucked, washed, and sliced into strips before being dipped in a delicious batter, fried and then frozen. If you’re looking for a good steak, we added beef ribeyes from SuKarne. These steaks are fresh lip-on, heavy ribeyes from Mexico and loaded with flavor.

For a great breakfast item, we added Dave’s Killer Bread® Rockin’ Grains™ english muffins. These English muffins are organic and packed with grains and seeds and contain no bleached flour or high fructose corn syrup – making them taste great and be great for you. From Mayson’s, we added mango margarita puree to add to our new lengthy collection of margarita purees and mixes (see last week’s post for more Mayson’s products). Lastly, for our new nonfood items, we added hinged plastic takeout containers from Sabert. These containers have a black base with a clear top, and are great for packing food for takeout.
