Ingredients
  • 1 Pch Santiago® EXCEL® Refried Beans Smooth, prepared (Item #28816)
  • 5 Cup Avocado, 1/4″ diced
  • 5 Cup Fire-roasted tomato salsa
  • 3.75 Qt. Romaine lettuce, shredded
  • 20 Each Flatbread, baked
  • 2.5 Cup Cotijo cheese
  • 6.5 Cup Poblano peppers, 1/4″ diced, sautéed
  • 1.25 Cup Sour cream
Directions
  1. Prepare beans according to package directions. Add salsa and stir well to combine. Hold warm.
  2. To assemble, top flatbread with 2/3 cup spicy beans, 1/4 cup peppers, 1/4 cup diced avocado, 3/4 cup shredded lettuce, 2Tbsp cheese and then drizzle 1.5 Tbsp sour cream. Serve immediately.

71% of consumers agree Mexican cuisine is unique and exciting, and 55% of consumers are likely to order dishes with ethnic flavors for dinner. Plus, 47% of consumers would occasionally order fish tacos at a restaurant. What does that add up to? BOOM BOOM FISH TACOS have menu appeal, and plenty of flavor to satisfy hungry, adventuresome diners.

Ingredients

  • 1 oz cabbage, chopped
  • 1 oz cucumber, chopped
  • 1 oz red pepper, small chop
  • 3 flour tortillas
  • 3 panko breaded fish fillets
  • 3 tbsp Boom Boom Sauce (Item #7827)
  • 2 fl oz pico de gallo
  • 1 Lemon wedge

Directions:

  1. Mix chopped Napa cabbage, cucumber, and red pepper together to make a slaw. Set aside
  2. Place fish in deep fryer until golden brown with an internal temperature of 145°F and drain.
  3. Place flour tortillas on flat top grill for 30 seconds on each side and remove to service plate.
  4. Fill each tortilla with 1 piece of fish, drizzle with 1 tablespoon of Boom Boom Sauce (KE1936) and top with 1 ounce of the freshly made slaw.
  5. Serve with a side of pico de gallo and a fresh lemon wedge.

Grilled “double-crusty” jalapeno red skin potatoes mashed and topped with a mixture of roasted “blistered” bell peppers and poblanos, sliced chorizo and topped with Cotija crumbles. This is a great dish to be served as an appetizer or a side for some needed spicy southwest inspired flavor.

Ingredients
Jalapeño Cheddar Red Skinned Mashed Potatoes 8 oz.
Chorizo, cooked, sliced 4 oz.
Green bell pepper, roasted 4 strips
Poblano peppers, or other mild peppers, roasted 4 to 5
Cotija cheese, crumbled 3 oz.
Jalapeños, sliced 2 tbsp.

 

Directions:

  1. Prepare 1 pouch of Jalapeño Cheddar Red Skinned
    Mashed Potatoes cooked according to their directions.
  2. Place 8 oz. mashed potatoes in oven proof bowl. Grill amount needed until golden brown and crusty. Break up and place at the bottom of platter.
  3. Place 4 oz. sliced chorizo on top of mashed potatoes.
  4. Place 4 strips of roasted green bell pepper on top of chorizo.
  5. Scatter 4-5 small poblano peppers.
  6. Place 3 oz. crumbled Cotija on top of peppers.
  7. Top with 2 tbsp. sliced jalapeños.

Sweet, crisp kernels perfectly aligned in golden rows on a natural serving vessel, to which you plant your face on and gnaw off the kernels “typewriter style”. Then there is the Mexican street corn style corn; which brings it to a whole new level. Street corn is typically served on the cob and coated with layers of vibrant flavors… mayonnaise, Cotija cheese, chili pepper flakes and cilantro to name a few. Yes, this can be messy to dig into. So, you should expect and be open to, getting the aforementioned toppings all up in your grill! Well worth the adventure though.

However, if your preference is to keep you face clean while dinning this can all be made “lazy style”… off the cobb. This recipe has the best of both worlds, sweet corn off-the-cobb with all the fixings, served up in the form of a delicious hot and bubbly dip.

INGREDIENTS

  • 2lbs fully-cooked sliced beef in barbecue sauce (about 2 cups)
  • 8 small flour tortillas
  • 1 1/2 cups shredded cheddar and monterey jack cheese
  • 1/2 cup chopped green bell pepper
  • 1/4 cup chopped onion

DIRECTIONS

    1. Heat oven to 400˚F. Lightly spray 2 large baking sheets with nonstick cooking spray. Place 4 tortillas on each baking sheet. Sprinkle 3 tablespoons cheese evenly over each tortilla.
    2. Combine beef, bell pepper and onion in medium bowl. Spoon about 1/4 cup beef mixture onto each tortilla. Fold tortillas in half to close.
    3. Lightly spray tops with cooking spray. Bake in 400˚F oven 10 minutes or until tortillas are lightly browned.

INGREDIENTS

  • 1 telera roll item #7975
  • 2 oz honey hot ranch
  • 3 oz crispy chicken
  • 1 oz shredded jack cheese
  • 1 tablespoon diced tomato
  • 1/2 oz sliced white onion
  • 1/4 sliced avocado
  • 3 thinly sliced jalapeno rings
  • 1 tablespoon chopped cilantro

HONEY HOT RANCH

  • 2 cups hot wing sauce
  • 2 cups homestyle ranch dressing
  • DIRECTIONS
    1. Spray flat grill and toast roll, cut side down on grill, remove.
    2. Drizzle each side of bread with 1 oz honey hot ranch.
    3. Place cheese on chicken and melt.
    4. When cheese is melted, place chicken on bottom half of roll. Top chicken with tomato, white onion, avocado, jalapeno, cilantro and arugula.
