From Columbus®, we’ve added Sliced Pancetta. This dry-cured pork belly has been beautifully seasoned with salt and spices and then hand-rolled and tied to provide an intense, flavorful bite.  An Italian invention, Pancetta is a versatile ingredient and can be used as a cold cut on a sandwich, on burgers, or to add flavor to soaps, salads, and pastas. Each 3 oz package comes sliced for convenience.

From Packer Label, we’ve added Extra Heavy Duty Mayonnaise. A classic, fresh-tasting mayonnaise made with premium ingredients, specially blended to enhance dishes and deliver quality, performance, and consistency, while adding flavor to every application.

Here’s an easy recipe for that last-minute crowd pleasing, so you can impress without the stress.

INGREDIENTS

TURKEY SALAD
MEASURE
Fat-free Mayonnaise 1/4 cup
Sambal Oelek Paste 1 Tbsp
Jennie-O Oven Roasted Turkey Breast 1 cup
Green Pepper, Chopped 2 Tbsp
Shredded Carrots 2 Tbsp
Red Pepper, Chopped 2 Tbsp
Green Onion, Thinly Sliced 1/4 cup
Celery, Diced 1/4 cup
 CORN CAKES
Measure
Frozen Corn Kernels, Thawed 2 cups
Green Onioon, Thinly Sliced 1/2 cup
Flour 1/3 cup
Salt 1/4 tsp
Garlic Powder 1 tsp
Baking Powder 1/2 tsp
Baking Soda 1/2 tsp
Milk 2 tsp

Directions:

  1. Turkey Salad: Combine all ingredients in a medium bowl.  Cover and refrigerate until ready to use.
  2. Corn Cakes: Combine all ingredients in a medium bowl.  Heat a non-stick skillet over medium heat.  Drop 1 tablespoon of corn cake mixture about 1 1/2 inches apart in hot skillet. Spread mixture to make corn cakes round.  Cook about 2 minutes per side until golden brown.
  3. Place corn cakes on a serving platter.  Top with Thai turkey salad mixture.

Yeild: 18 servings (1-2 corn cakes per serving)

From Ken’s®, try adding the mayonnaise packets to your inventory – creamy full-body flavored white mayonnaise in small convenient packets makes this item perfect for takeout orders. For something a little more fishy, try the clam strips we added from Sea Watch. These strips are made exclusively from the Atlantic Surf Clam and are shucked, washed, and sliced into strips before being dipped in a delicious batter, fried and then frozen. If you’re looking for a good steak, we added beef ribeyes from SuKarne. These steaks are fresh lip-on, heavy ribeyes from Mexico and loaded with flavor.

For a great breakfast item, we added Dave’s Killer Bread® Rockin’ Grains™ english muffins. These English muffins are organic and packed with grains and seeds and contain no bleached flour or high fructose corn syrup – making them taste great and be great for you. From Mayson’s, we added mango margarita puree to add to our new lengthy collection of margarita purees and mixes (see last week’s post for more Mayson’s products). Lastly, for our new nonfood items, we added hinged plastic takeout containers from Sabert. These containers have a black base with a clear top, and are great for packing food for takeout.

There are lots of new items this week! From La Française French Bakery, we added delicious flaky sliced croissants, offered in butter and margarine. We also added white all-natural pizza dough balls from The Dough Co. right in Lewiston, Maine; available in 6 or 10 oz. dough balls. Speaking of Maine, try some of the new coffee blends we just got in from Carrabasset Coffee Company, another Maine-made brand – both the Sunrise Breakfast Blend and Jamacia Me Crazy are light roasts with bold flavor.

With summer (and Cinco de Mayo) right around the corner, we knew we had to stock up on the margarita necessities. From Mayson’s, we added margarita mixes and fruity purées in a variety of flavors. With the mix you can go frozen or on the rocks, and elevate it with the strawberry, raspberry, peach or watermelon purée for an added delicious flavor. For a perfect on-the-go condiment, grab some premium mayonnaise packets from Ken’s; great for takeout or outdoor dining. We also added Upper Crust® fine Japanese-style breadcrumbs that provide an all-around better crisp to your fried foods and does not clump up – a great alternative to standard American or Italian-style breadcrumbs.

From Jennie-O, we added all-natural pulled white meat turkey. Being fully cooked and with no salt added, it is a perfect base to add your own flavor and customize it to your desired dish, from salads to casserole to soup. For seafood lovers, try breaded mini popcorn shrimp from Mariner Jack®. These shrimp are peeled and undeveined with the tail off, coated in batter and breadcrumbs and individually quick frozen for portion convenience and cooks up in minutes.   From Excel®, we got select beef chuck rolls, neck-off. Coming from shoulder and rib area, this cut of meat is great for stews, stir frys, ground beef and more.

Lastly, for our nonfood items, we added Companions™ Essentials Stretch Hybrid Gloves in multiple sizes – medium, large, and extra large. These powder-,latex-, and vinyl-free gloves are ideal for numerous tasks. By sizing down one size, this new glove will provide you a tight,”second-skin” fit. Each glove is produced with a unique diamond pattern texture that allows the user to fully grasp even the smallest ware in any kitchen.

INGREDIENTS 

  • 1 cup Hellmann’s Real Mayonnaise (Item #70605)
  • 3 tbsp Pure Maine maple syrup (Item #3303)
  • 20 slices French Toast (prepared)
  • 1 cup Maple Mayonnaise (prepared)
  • 20 oz, Jennie-O Tender Brown Turkey, thinly sliced (Item #4124)
  • 20 slices Bacon (cooked)
    Kick it up a notch with Smithfield’s Applewood Log Smoked 10/14 bacon (Item #22302), or add a unique twist with Hormel’s Market Cut Shoulder Bacon (Item #16283)
  • 10 slices Great Lakes Muenster cheese (Item #9980)

DIRECTIONS

  1. Prepare the Maple Mayonnaise (combine ingredients and chill)

From National Checking Co. we have new 1×3″ and 1×7″ “Secure It” Tamper Proof Labels; give your customers peace of mind with labels that will break when tampered with.

We’re introducing a new line of microwave-safe hinged takeout containers, increase value and affordable alternatives to foam and paper clamshells. The clear, anti-fog lid is vented to allow steam to dissipate, keeping food looking fresh and appealing while eliminating order errors. Stacking will not block the vents further preserving the texture of the food. Serves 2

INGREDIENTS

  • 5 oz. Hormel, Fire Braised Turkey Breast sliced 1/4″ thick (Item #9003)
  • 4 slices Hormel, Pecan Wood Smoked Shoulder Bacon (Item #16283)
  • 2 ea. focaccia roll, toasted and seasoned with herbs & sea salt
  • For the dressing, 2 oz. feta cheese,1 tsp. mustard,1 tblsp. mayonnaise, 2 tbsp maple syrup, salt & pepper to taste
  • 2 ea. soft to medium boiled egg

Build it:

  1. Dress and grill the focaccia / warm the turkey and bacon on your griddle or skillet.
  2. Layer the focaccia with shoulder bacon, turkey, maple feta aioli and egg.
  3. Lightly press sandwich together to burst the egg.

INGREDIENTS

  • 1 ea deep fried, chicken filet
  • 1 ea toasted, sesame seed bun
  • 1 tablespoon salsa roja aioli *recipe below
  • 1 tablespoon serrano chili mustard *recipe below
  • 1 ea sliced, pepper jack cheese
  • 2 fl-oz serrano chili cream gravy *recipe below
  • 4 ea sliced, grilled onions
  • 4 ea sliced, fresh pickles
  • 1 ea lettuce leaf
  • 16 fl-oz spicy kettle chips (optional)

DIRECTIONS

  1. Fry chicken breast until internal temerpature is 165˚F. Spread crown of toasted bun with salsa roja aioli and heel with serrano chili mustard.
  2. Top with fried chicken breast, pepper-jack cheese, serrano chili cream gravy, grilled onions, fresh pickles and lettuce.
  3. Place crown on top, and serve with spicy kettle chips (if desired)!

SERRANO CHILI CREAM GRAVY

INGREDIENTS

  • 1 fl-oz fried chicken oil
  • 1 fl-oz flour
  • 8 fl-oz half and half cream
  • 8 fl-oz Kogi serrano chili sauce

DIRECTIONS

  1. Place 1 fl-oz oil from deep fryer in saute pan, stir in flour and cook on low heat until lightly browned.
  2. Slowly add in half and half cream, stirring constantly until smooth. Add in Kogi serrano chili sauce. Salt and pepper to taste. Cook for five minutes and hot hold until needed.

SALSA ROJA AIOLI

INGREDIENTS

  • 8 fl-oz mayonnaise
  • 4 fl-oz kogi salsa roja

DIRECTIONS

  1. Combine mayonnaise with Kogi salsa roja and blend well. Place in storage container, label date and refrigerate.

SERRANO CHILI MUSTARD

INGREDIENTS

  • 8 fl-oz Kogi serrano chili sause
  • 4 fl-oz Kogi salsa

DIRECTIONS
