After butter-brushing a young turkey, sprinkle brown sugar, cajun spice, thyme, and oregano on top, to not only add more flavor but also transform the meal into a southern-style adaptation.

Choosing a young turkey means you get tender, juicy meat with a shorter cooking time. It’s a practical choice for a flavorful and efficient cooking experience, delivering a succulent outcome without compromising on convenience.

Ingredients 
  • 2 tablespoons light brown sugar
  • 1 tablespoon Cajun seasoning
  • 2 teaspoons ground oregano
  • 2 teaspoons dried thyme leaves
  • 2 teaspoons garlic powder
  • 1 (8 to 12-pound) turkey
  • 3 tablespoons butter, softened
Directions
  1. Combine brown sugar, Cajun seasoning, oregano, thyme, and garlic powder in a small bowl
  2. Rub turkey with butter and sprinkle with brown sugar mixture.
  3. Place turkey in a v-rack, upside down, over a roasting pan. Cooking your turkey upside down makes for a juicy, tender turkey.
  4. Heat oven to 325°F.
  5. Remove neck and giblets. These may be used to prepare gravy or stuffing. The plastic leg clamp may be left on during cooking
  6. Place turkey on a rack in a shallow pan, breast side up, and loosely cover with foil. Roast at 325°F. for 3 to 4 hours.
  7. Remove foil after 1 hour of cooking. Continue to roast at 325°F. until the meat thermometer inserted into the thickest part of the thigh registers 180°F. Juices should run clear. Always confirm doneness with a meat thermometer.
  8. Let the turkey stand for 20 minutes before carving. For optimal safety cook stuffing and turkey separately. If desired, add fully cooked stuffing to the cooked turkey just prior to serving.

From Ocean Horizons we’ve added a new pack size of their popular haddock fillets. These 10-12oz fillets are boneless and skinless and come individually quick frozen, in a 10/lb pack size. Also in proteins we’re stocking Carolina Deluxe Oil Browned Turkey Breast. This classic turkey breast is skinless, browned in oil, multi-piece product with a traditional shape from formed breast meat; a top choice for sandwiches and salads.

From Shaker Pond Ice Cream we’re now stocking their delectable Raspberry Sorbet. This fruity, dairy-free treat is not only a great addition to ice cream boards and dessert menus, it’s also a fun ingredient for frozen beverages and creative summer cocktails. In non-food inventory we’ve added 12″ jumbo toilet tissue rolls from Alliance. Each pack contains 6, 1860 foot (that’s more than a 1/3 of a mile!) of 2-ply tissue on a 3.3″ core.

If there is one thing I’ve learned during my tenure in the culinary world, it’s to have a few production tricks up your sleeve. One such trick is to work a few base recipes into your repertoire. Base recipes are just that, a starting “base” from which other derivative recipes can be made. The trick is to be creative and thoughtful… “How can I use my base to create other recipes?”

One of my past favorite base recipes was a vanilla crème Brule base, which became the foundation for a French toast dip, house made ice cream, whipped custard in a deconstructed tiramisu… and yes, as a crème Brule.

In this video I’m starting with raw turkey breast to showcase the fundamentals of base recipes, and to demonstrate how easy it can be to turn one recipe into three different menu options.

We got lots of great items in this week! To kick things off, try the turkey gravy mix from Vanee to elevate your Thanksgiving meals. We recommend adding a drizzle on the turkey and mashed potatoes; yum! We also added some delicious sweets – chocolate chip cookie dough from Best Maid and whole-grain banana muffins from Sara Lee. With the cookie dough and muffins already pre-made, these are great options to add to your menu for a low-labor, high-profit scenario.

Next up, it’s breakfast time! We added a variety of Post brand cereals, including Tootie Fruities, Berry Colossal Crunch, Cinnamon Toasters, Coco Roos, Rice Krispies, Frosted Flakes, and Marshmallow Mateys. With all the new offerings being a small single-serving (0.63 – 2 oz) these are great to sell on-the-go or offer as a school breakfast option. In addition, looking towards the holidays now is the perfect time to pick up the peppermint-flavored syrup we just added from Monin to add to coffees, cocktails and more.

Get cozy this winter with the new soups we just got in from Highland Market and Vanee. From Highland Market, we added cream of chicken and cream of mushroom soup, and from Vanee we added chicken noodle. These are a fantastic base to create some delicious, hearty cold weather menu items. We also added Mexican Original white flour tortillas with a 6-inch diameter.

From Rangeline, try the new turkey breast offered oven-roasted, hickory-smoked and/or tender-browned. All of these new options are fresh with delicious flavor. From Smithfield we added fully-cooked frozen bacon pieces for the perfect quick and easy dish topper. Lastly, we added portion cups & lids from Empress. Try the 3.25-ouce black cups or, if you need a bigger size, 5.5-ounce translucent cups. The lid we added is also translucent and fits on the 3-ounce, 4-ounce, and 5-ounce Empress brand portion cups.

Next, we have some sweet and delicious breakfast options. From Super Bakery, we now offer glazed cinnamon buns and mini apple cinnamon bread loaves. Both of these items are made with whole grain and come individually-wrapped, making them a more balanced on-the-go option for breakfast.

Lastly, we added a variety of frozen dinner rolls from Flowers and Bridgford. From Flowers, we have the 2.5″ square rolls – simply just thaw and serve. From Bridgford, we have honey wheat dinner rolls offered in 1 oz. or 2 oz. sizes. All three of these rolls are made with whole grain and are baked in the oven to perfection.

There are lots of new items this week! From La Française French Bakery, we added delicious flaky sliced croissants, offered in butter and margarine. We also added white all-natural pizza dough balls from The Dough Co. right in Lewiston, Maine; available in 6 or 10 oz. dough balls. Speaking of Maine, try some of the new coffee blends we just got in from Carrabasset Coffee Company, another Maine-made brand – both the Sunrise Breakfast Blend and Jamacia Me Crazy are light roasts with bold flavor.

With summer (and Cinco de Mayo) right around the corner, we knew we had to stock up on the margarita necessities. From Mayson’s, we added margarita mixes and fruity purées in a variety of flavors. With the mix you can go frozen or on the rocks, and elevate it with the strawberry, raspberry, peach or watermelon purée for an added delicious flavor. For a perfect on-the-go condiment, grab some premium mayonnaise packets from Ken’s; great for takeout or outdoor dining. We also added Upper Crust® fine Japanese-style breadcrumbs that provide an all-around better crisp to your fried foods and does not clump up – a great alternative to standard American or Italian-style breadcrumbs.

From Jennie-O, we added all-natural pulled white meat turkey. Being fully cooked and with no salt added, it is a perfect base to add your own flavor and customize it to your desired dish, from salads to casserole to soup. For seafood lovers, try breaded mini popcorn shrimp from Mariner Jack®. These shrimp are peeled and undeveined with the tail off, coated in batter and breadcrumbs and individually quick frozen for portion convenience and cooks up in minutes.   From Excel®, we got select beef chuck rolls, neck-off. Coming from shoulder and rib area, this cut of meat is great for stews, stir frys, ground beef and more.

Lastly, for our nonfood items, we added Companions™ Essentials Stretch Hybrid Gloves in multiple sizes – medium, large, and extra large. These powder-,latex-, and vinyl-free gloves are ideal for numerous tasks. By sizing down one size, this new glove will provide you a tight,”second-skin” fit. You’ll need a pretzel stick pressed through the layers, just to hold it all together!

INGREDIENTS

  • 1 French bread 2oz
  • 1 teaspoon ranch dressing
  • 1 1/2 oz sliced turkey deli meat
  • 1/2 oz sliced cheddar cheese
  • 1 slice fully cooked turkey bacon
  • 1/2 cup shredded romaine lettuce
  • 1/4 cup sliced fresh tomatoes
  • 2 ea pretzel sticks

DIRECTIONS

    1. Press thawed French bread open and spread ranch dressing across surface.
    2. Layer lettuce, tomatoes, turkey, bacon then cheese on bottom half.
    3. Close bun and cut in half diagonally; press pretzel stick through middle of each half gently and serve.
