Elevate your salsa game with a tantalizing twist of heat and flavor.

This Mexican-style Spicy Shrimp salsa combines fresh ingredients like onions, tomatoes, avocados, and jalapeno peppers, all harmonized with zesty lime and clam juice to create a tantalizing dance of flavors on your taste buds.

Serves 2-4

Ingredients
  • 1 lb. Cooked Shrimp, peeled, tail off, thawed according to package directions
  • 1 medium Yellow Onion, diced
  • 1 Lime, juiced
  • 2 Tomatoes, diced
  • 1 Celery Stalk, diced
  • 1 Jalapeño Pepper, seeded and finely diced Cilantro, fresh, chopped
  • 1 1/2 cups Chilled Tomato and Clam Juice Cocktail Ketchup
  • 2 Tbsp Hot Sauce
  • 2 Avocados, peeled, diced
  • Salt & Pepper, to taste
Directions
  1. Combine diced onion and lime juice, and let sit for at least 10 minutes to soften.
  2. In a large bowl, toss together the shrimp, tomatoes, celery, jalapeño, and cilantro.
  3. In a separate bowl, whisk together tomato and clam juice cocktail, ketchup, and hot sauce.
  4. Pour the tomato and clam juice cocktail mixture in with the shrimp and stir until combined. Add marinated onions and diced avocado. Season with salt and pepper.
  5. Let the shrimp cocktail chill for at least 1 hour before serving. 6. Serve with saltine crackers or tortilla chips

INGREDIENTS

  • 1 teaspoon vegetable oil
  • 16-20 jumbo shrimp
  • 1 cup Citrus Garlic Mojo Sauce
  • 4 cups arugula
  • 1 cup julienne jicama
  • 1 cup diced avocado
  • 1 cup diced mango
  • 4 oz lime vinaigrette
  • salt and pepper to taste

DIRECTIONS

    1. Heat grill to medium and lightly oil grates.
    2. Assemble shrimp skewers. Use two long skewers, threading 1 skewer through the head end of the shrimp and one through the tail. Season with salt and pepper.
    3. Grill until shrimp begins to turn opaque, about 2-3 minutes. Flip and brush liberally with citrus mojo sauce and cook until opaque throughout (about 3-4 minutes), while brushing on more sauce.
    4. Place arugula, jicama, avocado and mango in a bowl and toss with lime vinaigrette. Place onto serving plate and top with grilled shrimp.

First from Duro a new Tall Paper Bag. Duro Bag is a leading manufacturer of paper bags and sacks in North America. Next from Dianne’s, just in time for Fall a new Pumpkin Lava Cake. A great addition to any seasonal menu! From Greenware we have 4 new Hinged Paper Containers. All 4 containers are made from wheat straw, compostable and microwave safe. The waffle bottom board keep food fresher, longer. First a 9x9x3 hinged container with 3 compartments. Another 9x9x3 container, with 1 compartment. Next a 9x6x3 container, 1 compartment, then lastly a 6x6x3 container. These containers are made from the grains left over after the harvest, and provide additional income for farmers. To comply with the new FSMA laws we have the same fresh produce, just now in different packaging. Instead of the bags previously used, the following items are now in boxes: oranges, lemons, red delicious apples, granny smith apples, hass avocados and golden pineapples. Same great produce, just with different Dennis item numbers.

The word timbale as it relates to the culinary world is generally a presentation created by the layering of ingredients using a ring mold. This timbale is an ideal representation of summer. Fresh layers of mildly spicy crab, sweet watermelon, buttery avocado and vine ripe tomatoes are flavor balanced in a way that spotlights the individuality of layers while not manipulating natural flavors by using overpowering ingredients. This timbale is indeed the taste of summer in every bite.

INGREDIENTS

For the dressed crab:

  • Equal parts ahi amarillo puree & sour cream
  • Splash of EVOO
  • S&P to taste
  • Mix to marry all ingredients
  • 4 oz crab lightly dressed
  • Reserve additional dressing for plate garnish; dot, drizzle or paint brush

For the avocado:

  • 1 ea ripe avocado, fork mashed
  • Zest of 1/2 lime
  • 8 sprigs cilantro, rough chop
  • S&P to taste

Additional needs:

  • Seedless watermelon medallions cut into 3″ rounds (about 1/4″ thick) using a ring mold.
  • Thin sliced tomato
  • Halved cherry/grape tomatoes
  • Diced red onion

Four new items from General Mills, single serve packs of cereal, all K12 approved. A Lucky Charms, Cinnamon Toast Crunch, Cocoa Puffs and Honey Nut Cheerios all 2oz grain equivalent. Three new items form Ace Bakery, first a Glossy Burger Roll, brushed with egg yolk for a dark yet sweet glossy finish. INGREDIENTS

  • 1ea toasted, sesame seed bun
  • 2 tablespoon serrano chili aioli *recipe below
  • 1 ea grilled, beef patty 8oz
  • 1 ea sliced, cheddar cheese
  • 2 oz grilled, sliced, spanish chorizo
  • 4 ea sliced, grilled onion
  • 4 ea sliced, avocado
  • 2 ea sliced, tomato
  • 1 ea fresh lettuce leaves

DIRECTIONS

  1. Spread crown of toasted bun and heel with serrano chili aioli. Top with grilled beef burger, cheddar cheese, pepper jack cheese, Spanish chorizo sausage, grilled onions, avocado, tomato and lettuce.
  2. Place crown on top, and serve with your choice of side!

SERRANO CHILI AIOLI

INGREDIENTS

  • 4 fl-oz Kogi serrano chili sauce
  • 4 fl-oz garlic aioli

DIRECTIONS

  1. Mix together ingredients in a small bowl, date and refrigerate.

From McCain we’ve added 3/8″ thick “fresh style” french fries. In burger buns, we’ve added a new 4″ seeded brioche burger roll from Rotella’s. From M. Robzen comes a new bulk shaved-steak option, SteakTacular shaved ribeye steak. INGREDIENTS

1/2 cup light mayonnaise
14.5 oz petite diced tomatoes, with green chilies drained
4 cooked, shredded, boneless, skinless chicken breasts item #30680 (alternatively, use item #1923)
1 teaspoon lemon juice
1 sliced thin small red onion
salt and pepper to taste
4 pc flat bread item #10501
1 cup shredded lettuce
1 peeled, diced avocado item #16190
1/2 cup sliced cheddar cheese

DIRECTIONS

  1. Combine mayonnaise and tomatoes and green chilis to make the aioli.
  2. Place chicken, lemon juice, red onion, salt and black pepper in a large mixing bowl; mix well.
  3. Place lettuce on flat bread and top with chicken mixture and avocados. Spoon green chili aioli on top.
  4. Garnish with shredded cheese, and serve!
