Ingredients:

  • 5 lb. bag Simply Potato, Garlic Mashed Potatoes (#23799)
  • 1⁄4 cup Butter, melted
  • 1⁄4 cup Garlic, minced
  • 1 cup Flour
  • 4 ea. Eggs
  • 1 cup Chives
  • 1 cup Morel Mushrooms, chopped (Seasonal SPO #25323)
  • 3⁄4 cup Parmesan Cheese, shredded
  • 8 cups White Wine and Butter Cream Sauce, prepared
  • 38 ea. Shrimp, sautéed
  • 38 ea. Scallops, seared
  • 8 ea. Lobsters, steamed and sliced into 10 medallions per lobster

Directions

  1. Prepare and heat Garlic Mashed Potatoes according to package directions. Allow to cool.
  2. Place into medium bowl and add melted butter, garlic, flour, eggs, chives, mushrooms and Parmesan cheese. Fold together until well incorporated.
  3. Place ½ cup of mixture into a well-seasoned waffle maker; cook until crisp and golden.
  4. Place one waffle onto plate and ladle ½ cup of cream sauce onto plate. Place 3 shrimp, 3 scallops, and 5 slices of lobster medallions onto plate. Serve hot.

Yield: 10 12-oz. servings

It’s always a good idea to have a few go-to ingredients in your culinary arsenal–the kind that work across the seasons. These all-star, all-season items make it easy to fire off inspired, seasonally fitting dishes from a pantry of ingredients you know, love, and trust – any time of the year.

In this preparation of a Curry Zucchini Salad, both the curry flavors and the consistent availability of zucchini perfectly fit the year-round strategy I mentioned. And, to dial in our seasonality, the rich flavors of this particular pairing scream fresh all-season comfort food! Well, to me they do.

The combination of the ingredients in the curry dressing creates a harmony of flavors, the final destination of which you can tweak to make your own. Although I use raisins in my dressing, cherries and or dates would make equally delicious substitutes.

New this week, we added a variety of fresh grapes with a range of flavors. Cotton Candy grapes are delicious round green grapes, and taste just as sweet as its name. The new Gum Drop grapes are also sweet in flavor and gives notes of – you guessed it – gum drops and gummy bears. They are dark red in color and make for a sweet tasty snack. Lastly, we added Moon Drop grapes. These unique grapes are dark blue in hue, have an elongated shape, and have a similar flavor profile to other black grapes. (They kind of look like mini eggplants!)

Which is not a horrible thing; just saying. Enter the lettuce cup shell-less taco–a fun way to fuse your love of tacos with your body’s need for roughage.

Quickles! Quickles are an expeditious way to always have fresh “pickled brightness” close at hand. Whether you’re quickling onions, cucumbers, peeled cherry tomatoes, or even cabbage; learning the “quickle shake” means you’re never without a quick pickle.

Mod your quickles with unique flavors!

Peruvian Quickles – Add a hearty teaspoon of either Aji Amarillo paste #23188 or Aji Rocoto paste #24443 to your quickles for a pleasing layer of Peruvian heat.

Calabrian Quickles – Add a healthy amount of Calabrian chili peppers #23697. They’ll add a bold firey flavor to your quickles.

Sweet & Sassy Quickles – Add a mix of yellow sweet peppers #23190 and red sweet peppers #23186, plus a couple ounces of the sweet pepper brine to your quickles.

Truffle Tomato Quickles – If using cherry tomatoes, pealing them will allow the flavor to absorb deeper. Add roasted red tomatoes #23222, roasted yellow tomatoes #23194, and substitute ½ of the salt with truffle salt #23184.

Middle Eastern Quickles – For a adventurous twist of flavor, add 1 tablespoon tahini paste #9926 and a healthy tablespoon of Za’atar #23230 to your quickles.

“Posh” Quickles – For an upscale quickle add a pinch of saffron #23192 to your mix. This works well with artichokes, tomatoes or seeded and shaved summer squash.

Although scone dough is relatively easy to make, it does take time to produce, and it can add an unnecessary bake shop-style mess to your limited kitchen space.
