Seriously, there’s no over-promising with this dessert. Featuring layers of brûléed banana, fluffy waffle, ice cream, and crunchy popcorn covered in chocolate and caramel sauces to achieve a treat that is equal parts sweet, equal parts salty and 100% awesome. It’s everything crave-able and then some!

Tip: Make more sales with social media, share a video of steps 6 through 8 to bring your followers through the door!

 Ingredients for 10 portions
Krusteaz® Buttermilk, Square Flat Bottom Waffle 30 ea
Vanilla ice cream 2, 1/2 gal
Granulated sugar, divided 2, 2/3 cups
Angie’s BOOMCHICKAPOP® Real Butter Popcorn 2 quarts
Bananas 5
J. Hungerford Smith® Caramel Fudge 2, 1/2 cups
J. Hungerford Smith® Mellocream® Chocolate Fudge 2, 1/2 cups

Directions:

  1. Thaw the waffles and the ice cream until both become soft. Heat waffles in an impinger or on a flat top grill until toasted.
  2. Line a full baking sheet with parchment, then spread the ice cream out into a 1-inch thick, even layer. Freeze until firm, at least 1 hour.
  3. On a parchment lined sheet tray, spread sugar out in an even layer, reserving a 2/3 cup. Bake in a 450°F oven until it turns brown, 15-20 minutes. Remove from oven and immediately sprinkle the popcorn on top. Set aside to cool.
  4. Remove frozen ice cream sheet from freezer; cut into 20, 4-inch squares.
  5. Build a triple layer ice cream sandwich: waffle, ice cream, waffle, ice cream, waffle. Return to freezer for no more than 10 minutes. Repeat with remaining waffles and ice cream.
  6. Slice bananas in half lengthwise, then sprinkle the cut sides with the remaining sugar. With a blow-torch, heat the sugar until it turns brown and gets hard.
  7. Remove ice cream sandwich stacks from freezer. Place on serving dish, then drizzle with 1/4 cup each of the chocolate fudge and caramel sauces.
  8. Place bruleed banana on top of sauce. Finish the sandwich by breaking apart the popcorn shards and topping the banana with them. Serve immediately.

Ingredients:

  • 5 lb. bag Simply Potato, Garlic Mashed Potatoes (#23799)
  • 1⁄4 cup Butter, melted
  • 1⁄4 cup Garlic, minced
  • 1 cup Flour
  • 4 ea. Eggs
  • 1 cup Chives
  • 1 cup Morel Mushrooms, chopped (Seasonal SPO #25323)
  • 3⁄4 cup Parmesan Cheese, shredded
  • 8 cups White Wine and Butter Cream Sauce, prepared
  • 38 ea. Shrimp, sautéed
  • 38 ea. Scallops, seared
  • 8 ea. Lobsters, steamed and sliced into 10 medallions per lobster

Directions

  1. Prepare and heat Garlic Mashed Potatoes according to package directions. Allow to cool.
  2. Place into medium bowl and add melted butter, garlic, flour, eggs, chives, mushrooms and Parmesan cheese. Fold together until well incorporated.
  3. Place ½ cup of mixture into a well-seasoned waffle maker; cook until crisp and golden.
  4. Place one waffle onto plate and ladle ½ cup of cream sauce onto plate. Place 3 shrimp, 3 scallops, and 5 slices of lobster medallions onto plate. Serve hot.

Yield: 10 12-oz. servings

First in the fresh produce category, we have a new kale cabbage blend. An eye catching mixture of of green cabbage, broccoli, shaved brussel sprouts, kale and radicchio. This blend is as versatile as it is delicious. Next from Van’s, a Gluten Free Natural Waffle. Light and cripsy without the gluten, dairy or eggs! Sweetened with real fruit juice, these waffle’s are packed with 23g of nutrient dense grains. Chef Tim has many favorite spices, but here are two of his favorites from Roland – Sumac Spice Powder, and the first ever Chef’s Spice rack feature – Za’atar Spice Blend. Sumac is purple in color, citrus in flavor and excellently paired with fish and/or pork! Za’atar, also know as “zaatar” and “zahtar” this Middle Eastern herb blend is comprised of a mixture of dry basil, thyme, oregano, sumac and sesame seeds. Learn more about how Chef uses Za’atar HERE. A new fun and unique item, Sushi Ginger, also known as shoga or gari, is an essential addition to any sushi plate. The ginger is meant to be eaten in between each piece of sushi as a palate cleaner. From Hunts an inverted red ketchup squeeze bottle. Next, from Lipton, Herbal Tea Variety pack. Hot tea helps your employees and customers manage the rhythm of a hectic working day.
