INGREDIENTS

• 40 pieces Sunny Fresh® Whole Grain Cinnamon Glazed French Toast (Item #27788)
• 2 lbs. Peanut Butter (Item #24677) / Alternative (Item #9007)
• 10 Ripe Bananas (Item #26102/26105)

DIRECTIONS

1. Place 20 pieces of thawed French toast on a lined sheet pan
2. Spread approximately 2 Tbsp of nut butter (or alternative) on one French toast
3. Slice bananas and place on top of nut butter
4. Top each slice with one of the remaining slices of French toast
5. Heat gently, covered in a 200˚F oven for 5 minutes, being careful not to melt the nut butter too much.

The “Big 8” allerens refer to a group of common allergens that are responsible for the majority of allergic reactions. These allergens include peanuts, tree nuts, wheat, soy, dairy, eggs, fish, and shellfish. These items are perfect for K-12 school systems that cater to individuals who have allergies or sensitivities to these allergens. The strawberry version contains dried strawberry, which helps add the strawberry flavor to the granola. INGREDIENTS

• 1 lb. ground beef
• 1 tsp. fennel seed
• 1/4 tsp ground coriander
• 1/4 tsp garlic powder
• 1/4 tsp paprika
• 1/4 tsp black pepper
• 1/8-1/4 tsp crushed red pepper
• 1-1/2 cups pizza sauce
• 4 round thin sandwich breads, any variety, split
• 1/2 cup shredded mozzarella cheese
• Toppings of choice (sliced black or green olives, sliced red or yellow bell peppers, sliced red onions)optional

DIRECTIONS

1. Combine ground beef, fennel seed, salt, ground coriander, garlic powder, paprika, black pepper and crushed red pepper in large bowl, mixing lightly but thororughly.
2. Heat large nonstick skillet over medium heat until hot. Add sausage mixture; gook 8 to 10 minutes, breaking into 1/2-inch crumbles and stirring occasional.
3. Stir in pizza sauce; cook 2-3 minutes or until heated through, stirring frequently.
4. Keep warm and set aside.
5. Place sandwich thinks, cut sides up, on rack of broiler pan. Spoon equal amounts of sausage mixture on each bread half
6. Evenly sprinkle with cheese and toppings, as desired.
7. Plae pizzas on rack of broiler pan so surface of cheese is 3 to 4 inches from heat.
8. Broil 4 to 5 minutes or until cheese is melted and bubbly.

This salami is a versatile ingredient that can be used in a variety of culinary applications. It can be sliced and added to sandwiches, pizzas, salads, and pasta dishes, or simply as an appetizer with cheese and crackers. Each case comes with four half-sticks averaging 3.2 lbs.

Just in time for Back-to-School, we added two new K12 items from Bake Crafters. Just when you thought pancakes couldn’t get any better, Bake Crafters brings you delicious pancake bites! These gourmet, bite-sized pancakes are whole grain and perfect any time of the day. Serve them with syrup, powdered sugar, or just as they are! Made from a delicious pancake batter these bites are designed to be easily heated and served, providing a quick and convenient breakfast or snack option.  The second item from Bake Crafters is Whole Grain, White Garlic Pizza. You think you know pizza? Wait until you try this new Sal’s White Garlic Pizza! It’s made with a 50 percent whole grain crust, no artificial additives or preservatives, and only fresh ingredients.

And finally, from Smithfield®, we added fully cooked bacon slices. These ready-to-eat bacon comes in convenient bundles, with each slice of bacon being fully cooked saving time and effort in the food preparation process. If there is one thing I’ve learned during my tenure in the culinary world, it’s to have a few production tricks up your sleeve. One such trick is to work a few base recipes into your repertoire. Base recipes are just that, a starting “base” from which other derivative recipes can be made. The trick is to be creative and thoughtful… “How can I use my base to create other recipes?”

One of my past favorite base recipes was a vanilla crème Brule base, which became the foundation for a French toast dip, house made ice cream, whipped custard in a deconstructed tiramisu… and yes, as a crème Brule.

In this video I’m starting with raw turkey breast to showcase the fundamentals of base recipes, and to demonstrate how easy it can be to turn one recipe into three different menu options.

Try the new breaded chicken tender fritters we added from Koch Foods. This popular, delicious chicken menu item is perfect for carryout applications, and helps ensure portion and cost control for your operations. We also added fresh carrots offered in cello packs. From Lou Ana, we added Pop-All popcorn oil. Lou Ana’s has been the Oil Pro in the popcorn game for over 50 years, providing consistent quality in flavor and performance.

Next, the classic corn dog goes breakfast with the whole grain sausage pancakes on a stick from Foster Farms. It comes frozen and features a nutritious, fully-cooked turkey link wrapped in fluffy whole grain maple pancake batter – a great breakfast choice for schools. Lastly, we added frozen clams from Ipswich. These clams are sliced, sold by the gallon and arrive frozen, making a great labor-saving seafood item for your business.
