Meal kits can be a great source of revenue for restaurants and foodservice operations.

Once associated with direct-to-consumer subscription services and supermarket specialty cases, meal kits have become a valuable source of revenue for restaurants and other foodservice establishments. Perhaps that’s why Meal Kits were the second most popular new entrée item added in late 2020, according to Technomic. Meal kits for multiple people are proving especially popular among busy families who want to get lunch and dinner on the table quickly with minimal effort.

In fact, Technomic data reveals that about one-third (34%) of 18- to 34-year-olds are likely to purchase family meal bundles, including meal kits. By offering multiportion kits that feature comfort foods (including items such as sliders, fried chicken, pasta dishes, and pizza) operators can leverage the fact that consumers are continuing to turn to these family favorites—especially when they’re updated to add interest and appeal.

From an operational perspective, meal kits help with cross-utilization and the search for new sales. Ingredients and prep can have multiple applications, while the kits themselves can be promoted across varied dayparts, menu categories, or service modes (including takeout, delivery, and grab-and-go).

In addition, meal kits can put house specialties or other customer favorites in the hands of more patrons, including those who prefer to dine at home rather than on-premise. These DIY meal packages provide a chef-quality experience that helps build and maintain customer loyalty. Pairing the entrée with the diner’s choice of side(s) and an appetizer, dessert, and/or beverage creates a diverse meal kit that builds sales and satisfies any craving.

Many large chains have created meal kits around popular existing menus, such as Blaze Pizza’s DIY Pizza Kits with dough, sauce, and toppings for one, two, or four people; and Lazy Dog’s Backyard BBQ “pantry kit,” which includes steaks, hot dogs and buns, ingredients for a hot dog toppings bar, red potatoes, and coleslaw fixings.

Meal kits also offer an opportunity to innovate. Though known for its sandwiches, last spring Chik-fil-A introduced a Chicken Parmesan meal kit for two, featuring pre-measured and ready-to-heat ingredients (two seasoned, breaded, and pressure-cooked Original Chick-fil-A Chicken filets, marinara sauce, Italian-style cheeses, and creamy garlic and lemon pasta) and an easy, step-by-step recipe to prepare a meal for two in 30 minutes. The kit could also be customized upon request by substituting the Original Chicken filets for Grilled or Spicy filets.

In addition to providing food and beverages, meal kits that include an experience component, such as a theme or shareability, are even more appealing.

  1. Add a kit component, such as a salad that can be tossed with dressing or a dessert to reheat and finish, to a larger fully prepared takeout meal package.
  2. Curate a full dinner experience with DIY cocktails, multiple courses, wine, and a chef-guided prep video so that customers can enjoy a restaurant-level meal at home.
  3. Pack cold cuts, cheeses, and condiments for DIY sandwiches into a returnable picnic basket or branded tote bag for an outdoor adventure.
  4. Portion and price meal kits by the person for families, coworkers, groups of friends, and other large orders.
  5. Create beverage kits—smoothies, fortified or enhanced juices, and batchable cocktails—for multiple services. For example, a sangria kit could include a bottle of wine, cut fruit and other garnishes, and brandy for a group.
  6. Develop one-size-fits-all modular meal kits, such as basic pasta or pizza, that can be customized with various proteins, sauces, and other toppings.
  7. Put meal kits in the grab-and-go case along with prepared, ready-to-eat items.
  8. Consider family-style breakfast and brunch kits with all the ingredients needed for favorites like pancakes or hash.
  9. Add meal kits to online ordering systems to make them more convenient.
  10. Be sure to provide clear, easy-to-follow instructions for all meal-kit offerings.
  11. Investigate in-house or third-party delivery services or partnering with an online marketplace, in addition to more usual takeout/pickup.
  12. Observe all safety protocols including not only sanitation and food safety but also touch-free options like pay-ahead and curbside pickup.

In this new economy, remote ordering and offsite dining represent the bulk of the industry’s orders, with 67 percent of average restaurant sales generated by orders placed digitally or by phone for off-premises dining.

A digital-first economy has emerged since March 2020, fundamentally changing how restaurants engage with their guests, according to the 2021 edition of the “Restaurant Readiness Index,” a collaboration between Paytronix Systems Inc. and PYMNTS.

Although remote food orders now generate most of the average restaurant’s revenue, the extent to which restaurants rely on remote vs. on-site sales varies based on the type of restaurant in question. Sit-down restaurants generate more in-person sales than quick-service restaurants (QSR) at 40 percent vs. 25 percent, respectively. This underscores how important digital food sales have become since the beginning of the COVID-19 pandemic, the report found.

According to findings, online orders account for at least 40 percent more revenue than phone orders for the average restaurant, and orders placed by phone call generate just 28 percent of total restaurant sales. Aggregators alone generate 16 percent of the average restaurant’s revenue, but mobile order-ahead is close behind, totaling 14 percent of the average restaurant’s revenue.

Other findings include:

  • Remote food orders are now restaurants’ primary source of revenue, with the average QSR generating as much as 75 percent of sales from orders made online or over the phone. Online orders account for 40 percent more revenue than phone orders to the average restaurant, and aggregators drive more revenue than any other digital ordering channel.
  • Remote vs. on-site sales varies with the type of restaurant. QSRs generate more off-premises sales than sit-down restaurants. Food orders placed and eaten on-site generate 25 percent of the average QSR’s total sales but 40 percent of the average sit-down restaurant’s total sales.
  • Remote orders vary by channel. The average restaurant now generates 16 percent of its total sales via aggregator, 14 percent of its sales via mobile order-ahead, and 10 percent of its sales via desktop website.

“The digital-first food ordering habits that consumers have acquired since March 2020 have fundamentally changed the restaurant industry. The brick-and-mortar restaurant is no longer the focal point of consumers’ dining experiences but a single touch point in a much broader, decentralized, and digital-first ecosystem,” Paytronix wrote. “Restaurants have come to understand that providing digital ordering features is key to delivering their customers the food ordering experiences they want when they want them, but some restaurants have yet to realize that digital ordering features are the price of admission in this new market — not a differentiator.”

We added lots of great items this week! From Uncle Ben’s, we added two varieties of rice – Mexican fiesta and brown whole-grain. Both are great quick and easy to make sides that elevate the flavors of your dishes without the added labor. For your bread bowl needs, try the mini French boule bread from Vie De France. This bread is small and round in size, with lattice cuts along the top. Simply hollow out the center for a delicious bread bowl to serve your soups, chowders, and stews in.

From Sweet Source, we added a wide array of different sweet and delectable desserts for all your dessert needs. The New York style cheesecake is a creamy vanilla cheesecake baked on a buttery graham cracker crust. It’s delicious enough to serve as is but has the capability to be paired with whatever signature toppings you desire, and comes pre-sliced for ease and consistency. The tiramisu is a perfect blend of Italian ladyfingers soaked in espresso, topped with mascarpone cheese and a dusting of cocoa. Coming in a operator-friendly fold down tray for convenience, serve in the pre-sliced squares as is or get creative and use it for unique desserts and parfaits. The brownies are a rich fudge brownie made with real butter and chocolate. Tasty enough to serve as is in pre-sliced squares, or serve it up a la mode style. The salted caramel cheesecake is a sweet treat baked on a crumbly graham cracker crust and topped with a salted caramel drizzle. It comes in 14 pre-sliced pieces for consistency and convenience. For the last of the desserts, we have gourmet carrot cake – a three-layer cake loaded with shredded carrots, coconut, pecan pieces, and crushed pineapple and topped with a decadent cream cheese icing and chopped walnuts. This dessert is also pre-sliced for low labor and consistency.

For takeout containers, we added a black hinged micro container from Empress. This takeout box comes with 3 separate compartments for food separation and to prevent sauces and flavors from mixing, and is a common medium 8″x8″x3″ size for frequent use. We also received fruit cups. Try the diced peaches cup submerged in fruit juice, fruit pear cup, or orange mandarin fruit bowl. From Milano, we have their grated parmesan cheese. This is great for adding to a sauce or sprinkling on top of pasta dishes. We also added Stouffer’s alfredo sauce, which is a blend of Italian-style hard cheeses combined with cream to create a rich, flavorful alfredo sauce. It is gluten-free, has no preservatives and has a good source of calcium.

If you’re looking for a sweet breakfast/brunch item, try the chocolate-filled croissants from Savor. These croissants are filled with a chocolatey hazelnut filling, topped with chocolate shavings and are ready to bake with an easy freezer to oven application. From Pierce Chicken, we added 6-ounce breaded chicken breast fillets. These southern-style fillets have simple ready to cook instructions, and have a crunchy golden exterior for visually-appealing dishes.

Next, we received a variety of dressings and condiments from Highland Market. Choose from chunky blue cheese, creamy Caesar, golden Italian, buttermilk ranch and creamy coleslaw dressings, to tartar sauce and mayonnaise for sandwiches or dipping. For the mayonnaise, we offer both Highland Market extra heavy and heavy duty mayo. Each case comes with 4, 1-gallon jugs so you’ll never run out of your customers’ favorites. From Versa, we have premium soybean frying oil that showcases a neutral flavor profile and high heat stability, for a consistent quality finish. Lastly, we added 30-pound resealable bags of whole frozen strawberries from Wyman’s, a family-owned Maine company. With no sugar added, no preservatives and nothing artificial, these strawberries are great to add to smoothies, desserts, sauces and filled with vitamin C and heart-healthy fiber.

We brought in lots of great non-food and takeout items this week! From Lacerta Group, we added the 16-ounce 4 compartment snack pack. Each compartment is 4-ounces each, and the container is made with a tamper-evident tear strip to lock in freshness and prevent multiple people from touching/handling your customer’s food. From Berkley, we have two varieties of white soda spoons – wrapped or unwrapped. Their small scoop and long, thin handle makes these spoons great for stirring drinks or adding to your summer ice creams, milkshakes, and Hawaiian shaved ices. They are both also medium weight to help prevent snapping or breaking from hard-serve ice creams.

Next, we have panko chicken tenders from Brakebush. The tenders are NAE (Never raised by Antibiotics Ever) and arrive uncooked and coated in a crispy golden brown panko breading with toasted highlights. Simply fry at 350°F for 3-4 minutes for great-tasting chicken tenders with a delicious crunch; great as a finger food, appetizer, snack, or school lunch. From Advance, we added beef salisbury steak. This steak brings classic home-comfort flavors while also allowing for easy prep and low labor. Every case comes with 4-ounce frozen portioned slices to ensure consistency for each serving. We also added frozen beef ribeyes.

For your condiment needs, try the marinara sauces cups we just brought in from Red Gold. These 2.5-ounce cups allow you to get rid of side sauce prep, and are the perfect compliment to your pizzas, breadsticks, mozzarella sticks and much more. They are especially great for takeout orders for pre-portioned sizes and easy visibility. Lastly, we have clear 5.5-ounce cups from Berkley. These cups are made out of a clear plastic, and their small size makes them great for menu samples and meal sides such as pasta or potato salad.

As spring gets closer and the temperature gets warmer, having quality takeout products are a must. Stock up with the cold paper cups from Continental Cups – choose from a 16- or 22-ounce size. We know pizza boxes have been hard to come by lately… so we added more varieties of pizza boxes from NEMCO! This cake mix has rich, chocolatey flavor and produces moist, tender cakes that are easy to prepare. Cut cleanly and have evenly formulated cakes without partially hydrogenated oils.

New this week from Fritos, we added snack size corn chips. The small, 2-ounce bag of original-flavor corn chips are a great additional side to your sandwich and pizza orders. From Bagcraft, we added paper to-go meal bags in two sizes – a tall, medium size (6″x4.5″x11″) and a wide, large size (8″x5″x9″). The innovative ventilation system keeps hot food flavorful and crispy, while the high-barrier paper and anti-fog window helps keeping the food visible and the packaging grease-free. Next up, from the UniPro brand Cortona, we added extra virgin olive oil. Cortona’s Extra Virgin Olive oil has a deliciously robust flavor and aroma to satisfy your culinary needs.

From ES Foods, we added a new variety K-12 lunch pack. This lunch pack contains a beef stick, sunflower seeds, vegetable juice punch, raisins, and whole-grain Cheez-IT crackers. Try the three new flavors of nutrition bars from Zee Zees – choose from birthday cake, cocoa raisin, and cinnamon crisp. These are great for a to go snack or breakfast item. We also added great northern beans that are canned for more flavor and a longer shelf life. Lastly, we added black reclosable to go lids for the ThermoGaurd® insulated to go cups. These lids are versatile and fit cups from 12-ounces up to 24-ounces.

We got lots of great items in this week! To kick things off, try the turkey gravy mix from Vanee to elevate your Thanksgiving meals. We recommend adding a drizzle on the turkey and mashed potatoes; yum! We also added some delicious sweets – chocolate chip cookie dough from Best Maid and whole-grain banana muffins from Sara Lee. With the cookie dough and muffins already pre-made, these are great options to add to your menu for a low-labor, high-profit scenario.

Next up, it’s breakfast time! We added a variety of Post brand cereals, including Tootie Fruities, Berry Colossal Crunch, Cinnamon Toasters, Coco Roos, Rice Krispies, Frosted Flakes, and Marshmallow Mateys. With all the new offerings being a small single-serving (0.63 – 2 oz) these are great to sell on-the-go or offer as a school breakfast option. In addition, looking towards the holidays now is the perfect time to pick up the peppermint-flavored syrup we just added from Monin to add to coffees, cocktails and more.

Get cozy this winter with the new soups we just got in from Highland Market and Vanee. From Highland Market, we added cream of chicken and cream of mushroom soup, and from Vanee we added chicken noodle. These are a fantastic base to create some delicious, hearty cold weather menu items. We also added Mexican Original white flour tortillas with a 6-inch diameter.

From Rangeline, try the new turkey breast offered oven-roasted, hickory-smoked and/or tender-browned. All of these new options are fresh with delicious flavor. From Smithfield we added fully-cooked frozen bacon pieces for the perfect quick and easy dish topper. Lastly, we added portion cups & lids from Empress. Try the 3.25-ouce black cups or, if you need a bigger size, 5.5-ounce translucent cups. The lid we added is also translucent and fits on the 3-ounce, 4-ounce, and 5-ounce Empress brand portion cups.
