Beans are a super cost-effective way to add both value and diversity to your menu as a side dish offering.  The addition of pickled beets adds a pop of vibrant color, a sweet and sour sass, and a hint of earthy flavor to balance things out.  A major perk of this dish is it fits in regardless of the season; refreshing in the summer and hearty enough for the winter.

INGREDIENTS

2 oz Chipotle Mayo item #10421
2 oz prepared, black bean spread
4 cucumber slices
4 tomato slices
2 tablespoons pickled radish
2 tablespoons cilantro leaves
4 avocado slices
1 oz shredded iceberg lettuce
3 slices thick cut bread
1 grilled chicken breast

Black Bean Spread
2 cups drained, canned black beans
1/4 teaspoons ground cumin
2 tablespoons olive oil
2 tablespoons red wine vinegar
1/4 teaspoons kosher salt
1/2 teaspoon ground black pepper

DIRECTIONS

• Using a large food processor puree all ingredients well until smooth.
• Toast the bread.
• On the bottom slice spread the black bean spread topped with tomatoes and lettuce.
• Top with the second piece of bread and layer the Chipotle Mayo dressing followed by the chicken breast, cucumber, radish and cilantro.
• Top with the last piece of bread, toothpick, cut and serve!

DIRECTIONS

1. 1. Bake whole grain flour tortillas in large muffin tins.
   2. Heat chicken strips and toss with low-sodium taco seasoning.
   3. Heat black beans.
   4. Fill tortilla bowls with mashed potatoes, top with chicken and beans. Finish it off with cheese, salsa and green onion for garnish, and serve!
