Generously brushed with a luscious blueberry-maple glaze, this ham is bursting with flavors, the glaze; is made with sautéed garlic, ginger, and a harmonious blend of blueberries, maple syrup, balsamic vinegar, and lemon juice. Serves 6

Ingredients

• 1 Smoke’N Fast All-Natural Applewood Smoked CarveMaster Ham
• 1.5 cups packed brown sugar
• 1.5 Tbsp. olive oil
• 4 cloves garlic, minced
• 3/4 inch piece ginger, peeled and grated
• 6 cups blueberries
• 1.5 cups maple syrup
• 1/3 cup balsamic vinegar
• 3/4 lemon, juiced
• Salt and black pepper, to taste

Directions

1. Score the outside of the ham to create a diamond pattern, and rub the ham with brown sugar.
2. Bake in 350° F oven uncovered to an internal temperature of 155° F.
3. Over medium heat, sauté garlic and ginger in olive oil.
4. Add remaining ingredients, and bring to a light simmer for about 5 minutes to create a glaze.
5. Puree half of the glaze, and combine it with the remaining glaze. Adjust seasoning.
6. When ham reaches 155° F internal temperature, brush outside with some blueberry-maple glaze.
7. Carve one-fourth-inch slices and top with more glaze.

New this week, we added 32-ounce clear Safe-T-Fresh® bowls from Inline Plastics. These bowls come equipped with leak-resistant seals and a durable base, ensuring easy closing and long-lasting freshness. From Smithfield Farmland, we received premium deli ham with 10% water added. They measure 4″x6″ and come cooked and refrigerated. Slice them as thick or as thin as you like – it’s perfect for sandwiches and subs, as well as any lunch or breakfast application you would like to add ham to. We also added sliced pepperonis from Fontanini. This sliced pepperoni is made from select pork and beef cuts, and measures approximately 15-17 slices per ounce. The authentic red brick color and unique cup and char appearance helps achieve that old world look.

Although easy in preparation, this recipe for Ham & Brie Stuffed Crepes will have your guests wondering “How the heck did they make that?” … It’s that good!

On top of the taste, a few great things about this recipe are that the mix can be made in batches to suit your production levels, the crepes can be stuffed a day in advance and for the crepes you can use a premade labor-saver. Ease, flow and a labor-saving items make for a ham-dunk dish in any culinary operation.

Note: When packing for travel try serving the spinach and mushroom salad undressed and on the side to prevent over-wilted greens.

Caramelizing is the process of slowly extracting (cooking low & slow) either natural sugars or sugars that have been added during processing. Many vegetables that have a high natural sugar content are commonly cooked to caramelization; onions, carrots and parsnips to name a few. On the other hand, many hams have sugars added during the curing process, which makes ham perfectly suitable for caramelizing. And yes, caramelized ham would be great on a scoop (or 3) of vanilla ice cream, perhaps with the addition of grilled pineapple or toasted pistachios… just saying.
