We added two different pizza dough balls this week. From The Good Crust, we added their small batch Artisan pizza dough balls made with 100% “Maine Grains” fresh stone-milled flours. There is no artificial dough conditioners or preservatives in this dough. These are both great choices when it comes to school cafeterias.

From Valay, we added Barista Edition Oatmilk. Made from liquid oats, meaning this oat milk isn’t overly sweet or excessively heavy. This Barista Edition Oatmilk is fully foamable, putting you in total control over the density and performance of your foam, so you can showcase your latte art skills. Traditional New England staple or creative menu offering? There is no right or wrong answer, as it greatly depends on your individual preference. Personally, I tend to evaluate the classics and come up with ingredients that play well within the traditional palate. Baked haddock is a perfect example of a classic dish that can be taken down several unique avenues. By adding grilled corn and oregano, which is my favorite all-purpose herb, I was able to give this New England staple a creative twist without reinventing the wheel.

Why stop there? Push the limits of your baked stuffed haddock dish by adding alfredo sauce and torn basil leaves for an Italian twist, or bake with sliced chorizo, corn, and saffron butter for a Spanish twist.

First from Trident a 6 oz Pacific Cod Loin, Skinless/Boneless. Twice frozen wild pacific cod IQF, that’s a large lean whitefish with an excellent source of high quality protein. With a sweet flavor, delicate texture and a large melt in your mouth flake, it’s perfectly suited for a wide variety of menu applications. Next a Ready-to-use disinfectant from Dynasol. To use, remove gross filth or heavy soil prior to application of the product. Hold container six to eight inches from surface to be treated, then allow product to penetrate and the surface to remain wet for 3 minutes, no scrubbing is necessary. Next from Good Humor we have two new ice cream bars, first a Chocolate Éclair Ice Cream, chocolate and cake on a stick, yum! We wouldn’t blame you if you d-éclair this cake-coated frozen Chocolate Éclair dessert bar as your favorite. Secondly a simple yet classic Klondike bar, a huge hunk of creamy vanilla ice cream covered in a thick, chocolat-ey shell. INGREDIENTS

• 1 lb Mahi Mahi
• 8 oz Sweet Baby Ray’s Jamaican Jerk Wing Sauce
• 8 flour tortillas
• 2 cups corn mango salsa
• 8 sprigs cilantro

CORN MANGO SALSA

• 1 cup grilled corn
• 1 cup diced mango
• 1/4 cup small diced red onion
• 2 tablespoon small diced red pepper
• 2 tablespoon minced jalapeno
• 2 tablespoon fresh lime juice
• kosher salt to taste
• black pepper to taste

DIRECTIONS

1. 1. Lay the fish in a shallow dish, make a few slashes in the flesh with a sharp knife.
   2. Pour marinade over the fish, place in fridge to marinate for at least 2 hours.
   3. Place fish and marinade in a baking dish and bake in a preheated 400˚F oven until cooked and slightly charred, about 15-20 minutes.
   4. Heat taco shells.
   5. Place in tacos.
   6. Top with corn mango salsa and cilantro.

INGREDIENTS

• 17 whole eggs
• 4 1/4 cups 2% milk
• 100 4oz pollock fillet portions
• 6 1/4 crushed, whole grain cheez-it crackers
• 7 tablespoons grated parmesan

DIRECTIONS

1. 1. Preheat oven to 350˚F
   2. Combine eggs and milk
   3. Place fish in egg and milk mixture
   4. Dredge fish into crushed whole grain cheez-it crackers
   5. Sprinkle fish with parmesan
   6. Place on parchment lined pan and into oven
   7. Bake 20 minutes or until internal temperature reaches 145˚F for 15 seconds
