We all know that most visitors traveling to, and vacationing within New England, are looking to slurp down a wicked good amount of chowder. In some cases, your chowder might be the biggest reason for a repeat visit to your establishment year after year. Featuring a signature chowder on your menu could be just the ticket for those return customers or an easy up-sell by waitstaff. In this video recipe, I’ll demonstrate the basic steps of preparing a delicious chowder, from which you can derive your creative variations.

If preparing a unique chowder from scratch falls outside your operation’s current capabilities, we stock a fantastic variety of premium, ready-made, heat-and-serve chowders. These versatile products can even be used as a base layer for creating your restaurant’s signature chowder. Traditional New England staple or creative menu offering? There is no right or wrong answer, as it greatly depends on your individual preference. Personally, I tend to evaluate the classics and come up with ingredients that play well within the traditional palate. Baked haddock is a perfect example of a classic dish that can be taken down several unique avenues. By adding grilled corn and oregano, which is my favorite all-purpose herb, I was able to give this New England staple a creative twist without reinventing the wheel.

Why stop there? Push the limits of your baked stuffed haddock dish by adding alfredo sauce and torn basil leaves for an Italian twist, or bake with sliced chorizo, corn, and saffron butter for a Spanish twist.

Traditional or creatively elevated? It’s up to you!

From Ocean Horizons we’ve added a new pack size of their popular haddock fillets. These 10-12oz fillets are boneless and skinless and come individually quick frozen, in a 10/lb pack size. Also in proteins we’re stocking Carolina Deluxe Oil Browned Turkey Breast. This classic turkey breast is skinless, browned in oil, multi-piece product with a traditional shape from formed breast meat; a top choice for sandwiches and salads.

From Shaker Pond Ice Cream we’re now stocking their delectable Raspberry Sorbet. This fruity, dairy-free treat is not only a great addition to ice cream boards and dessert menus, it’s also a fun ingredient for frozen beverages and creative summer cocktails. In non-food inventory we’ve added 12″ jumbo toilet tissue rolls from Alliance. Each pack contains 6, 1860 foot (that’s more than a 1/3 of a mile!) of 2-ply tissue on a 3.3″ core.

Lastly, in school foodservice items we’ve added fresh, 2oz packs of red and green pepper strips, and 2oz packs of celery and carrot sticks. Each case contains 50, 2 oz packs.

New this week, we added jumbo transparent straws from D&W Fine Pack. Wrapped in paper, these straws work great for to-go beverages and adding an extra sanitary barrier from restaurant to customer. We also added skinless and boneless haddock fillets, which are frozen to allow for a longer shelf life. Lastly, from Fry Foods we added battered mozzarella sticks. And a delicious pre-cooked scrambled eggs with a savory crumbled turkey sausage and chunks of cheddar. Next we have Paper Cups, available in three sizes, a 12oz, 16oz and 22oz. All cups are double poly insulated and have leakproof seams. They come with an Impact Design, which is very similar to the Symphony Design. Solo lids should fit. Lastly, from Highliner new Battered “Haddie Bites”. These Haddock bites are made from sustainable MSC Haddock, inspired by the East Coast, they are a twist on the traditional “fish and chips”. Perfect to pair with various flavors and can be served as an appetizer, with a main dish or as a part of your small plates offerings.

Starting our baker’s dozen off is a spicy new international item from Minors, Szechuan sauce. Next are two new dessert items you’ll need to get before they’re gone. Direct from our new Dessert of the Month program – Peppermint Bark Cheesecake and Chocolate Chip Brûlée Cheesecake. Also new in the bakery sweets category, Mini Assorted Danishes from La Francasie french bakery. In produce we’ve added 2 new pack sizes of heritage blend petite red and green lettuce. Heritage blend is “the new look of salad.” In the dairy department we now offer delicious and creamy Pineland Farms Cheddar Cheese Curds. Pineland Farms is a Maine company. Moving on to proteins, in poultry we’ve added spicy whole grain chicken patties from Advance, and premium ABF “Thanksgiving Gobbler” turkey from McKenzie. Thanksgiving Gobbler features the rich flavors of Thanksgiving in every bite. New in seafood we’ve added 3 portion sizes of IQF haddock fillets; 6-8oz, 8-10oz and 12+oz fillets.
