The first new item on our list is a unique one! From Broadleaf, we added wild boar loin chops. These bone-in chops are 4-6 ounces in size and are a great specialty item for your dinner menu. From Cafe Classics try their rich, delicious, ready-to-serve chocolate pudding. For a great low-labor, high-profit dessert pair the pudding with the new graham cracker crumbs from Highland Market for a quick, but tasty, chocolate pudding pie.

From Sweet Source, we added two varieties of sugar substitutes to add to your kitchen or dining table packets for coffee drinkers or customers that like things a little extra sweet. Next, from Highland Market we have seasoned croutons offered two ways. Buy them in a bulk bag for in-person dining or portioned packages for takeout and on-the-go meals. From Fruity Snacks, try the Funable strawberry fruit snacks; a perfect add-on to kids’ meals and school snacks/lunches. We also added concentrated lemon juice from Portion Pac, offered in 4-gram packets.

On the dairy side of things, we have three new types of cheese blocks. Choose from extra-sharp white cheddar, sharp white cheddar, and sharp yellow cheddar offered in 10-pound blocks. Lastly, we added corned beef brisket from Old Neighborhood. This delicious meat arrives frozen and pre-cooked, allowing for a longer shelf-life and quick cook times for this classic holiday favorite.

Next from Sommer Maid, we have an EZ-Melt White Cheese Loaf. Great product for almost any application, easy storage with long shelf life and melts evenly! From Oscar Mayer, a classic lunch box staple – Fresh Beef Bologna, pre sliced. Available in 12/8 oz packages, this bologna is made with quality meat and no fillers so you can enjoy the taste you want with nothing you don’t! Lastly from Piantedosi, a new Semolina Bread Boule. Semolina is a type of flour made from the wheat middlings of durum wheat mainly used in making pasta, and couscous. Tim showed the attendees some fun ways to get creative with flatbread! Versatile and delicious, here are four easy recipes utilizing flatbread; follow the instructions or add your own unique touch!

WOW BANANA WRAP
INGREDIENTS

DIRECTIONS

1. Bring flatbread to room temperature and roll out once with a rolling pin*
   *rolling out flatbread makes it less brittle
2. Spread a layer of WOW Butter on flatbread.
3. Lay banana on flatbread, and line one side with dates. Sprinkle with granola and roll up. Cut into bite size pieces and serve!

MEDITERRANEAN WRAP
INGREDIENTS

• Sugar

DIRECTIONS

1. Bring flatbread to room temperature and roll out once with a rolling pin.
2. Spread a layer of hummus on flatbread.
3. Sprinkle feta cheese, or shredded cheese of choice, on flatbread.
4. Layer arugula, or mixed greens of choice, on top of feta.
5. Take marinated cucumbers* and place on top of arugula.
   *salt, pepper, apple cider vinegar and sugar, mix together. Set cucumbers in mixture and let sit in fridge
6. Roll up, and cut into bite size pieces.

BRUSCHETTA SANDWICH
INGREDIENTS

DIRECTIONS

1. Layout flatbread.
2. Place mozzarella on flatbread, spoon salsa or place sliced tomato on top of cheese.
3. Lastly lay basil down on the top.
4. Drizzle balsamic honey* on top of basil.
   *mix equal parts balsamic and honey in a bowl. 
5. Place other piece of flatbread on top, cut in half and serve!

GOOD MORNING FLATBREAD TACO
INGREDIENTS

DIRECTIONS

1. Warm flatbread in a pan, and layout flat.
2. Add scallions to scrambled eggs, and place on top of flatbread.
3. Lay tomato, or salsa on top of eggs, and top with cheese curds or shredded cheese and guacamole.
4. Next finish off with sriracha yogurt*
   *mix greek yogurt, salt, pepper and dried sriracha seasoning to taste. 
5. Fold up like a taco and serve!

A rustic sub roll, an unsliced white roll, both 8″ and 12″, and a medium kaiser roll. General Mills has a new stone ground flour, medium granulation and mild flavor. From Advance we have new sirloin beef slices, bulk hand trimmed Midwestern sirloin, marinated with food starch to enhance flavor and value. Empress Earth has introduced two jumbo paper straws, featured in black and white. And a clear unwrapped straw. Then a slide seal saddle deli bag (say that 5 times fast) from Elkay, with blue writing saying “Fresh To Go”. Lastly, we have whole grain Flamin’ Hot Cheetos snack bags, reduced fat.

INGREDIENTS
Serves: 100

200 slices of whole wheat bread
400 slices of cheddar cheese
3 lb of butter
75 oz Cheez-It® whole grain baked snack crackers

DIRECTIONS

1. Preheat convection oven to 350˚F
2. In a food processor, pulse the Cheez-It® crackers until finely textured, removed crushed crackers from food processor and reserve.
3. Melt butter in a large pan over medium heat or heat in microwave until melted reserve.
4. Lay out slices of bread on a flat surface and use rolling pin to flatten the bread both horizontally and vertically.
5. Place 2 slices of cheese next to each other on top of each slice of bread then roll up tightly to form the dippers.
6. Roll the dippers, as well as their ends, in melted butter, then roll into Cheez-It® crumbs. The butter will serve as a glue for the crumbs. Add tooth pick to the center of the roll to hold in place while cooking.
7. Bake rolls on ungreased paper lined backing sheet for 8 minutes at 350˚F

INGREDIENTS

100/1 oz bags of Keebler® Bug Bites Grahams item #4049
27 lb low-fat vanilla yogurt (can substitute for any flavor of yogurt)
50 cups of sliced peaches (or fruit of choice)

DIRECTIONS
1. Place 1/2 cup of sliced peaches (or fruit of choice) into bottom of small parfait cups.
2. Place 1/2 cup of low-fat vanilla (or yogurt of choice) on top of fruit.
3. Top with a Keebler® Bug Bite Grahams and serve.
