Grilled “double-crusty” jalapeno red skin potatoes mashed and topped with a mixture of roasted “blistered” bell peppers and poblanos, sliced chorizo and topped with Cotija crumbles. This is a great dish to be served as an appetizer or a side for some needed spicy southwest inspired flavor.

Ingredients
Jalapeño Cheddar Red Skinned Mashed Potatoes 8 oz.
Chorizo, cooked, sliced 4 oz.
Green bell pepper, roasted 4 strips
Poblano peppers, or other mild peppers, roasted 4 to 5
Cotija cheese, crumbled 3 oz.
Jalapeños, sliced 2 tbsp.

 

Directions:

  1. Prepare 1 pouch of Jalapeño Cheddar Red Skinned
    Mashed Potatoes cooked according to their directions.
  2. Place 8 oz. mashed potatoes in oven proof bowl. Grill amount needed until golden brown and crusty. Break up and place at the bottom of platter.
  3. Place 4 oz. sliced chorizo on top of mashed potatoes.
  4. Place 4 strips of roasted green bell pepper on top of chorizo.
  5. Scatter 4-5 small poblano peppers.
  6. Place 3 oz. crumbled Cotija on top of peppers.
  7. Top with 2 tbsp. sliced jalapeños.

INGREDIENTS

  • 1ea deep fried, breaded pork chop cutlet
  • 8 oz mixed vegetables
  • 2 fl-oz  Kogi secret weapon sauce
  • 4 fl-oz serrano chili cream gravy *recipe below
  • 8 fl-oz garlic mashed potatoes

DIRECTIONS

  1. Place breaded pork chop cutlet in deep fryer for four minutes until internal temperature is 145˚F-150˚F. While pork is cooking place vegetables slices in grill for two minutes.
  2. On each side brush with Kogi secret weapon sauce. Drain fried pork cutlet and place on a plate, ladling serrano chili cream gravy over top.
  3. Brush grilled vegetables one last time and remove to place with pork. Place garlic mashed potatoes on the side, and serve!

SERRANO CHILI CREAM GRAVY

INGREDIENTS

  • 1 fl-oz fried chicken oil
  • 1 fl-oz flour
  • 8 fl-oz half and half cream
  • 8 fl-oz Kogi serrano chili sauce

DIRECTIONS

  1. Place 1 fl-oz oil from deep fryer in saute pan, stir in flour and cook on low heat until lightly browned. Slowly add in half and half cream, stirring constantly until smooth. Add in Kogi serrano chili sauce. Salt and pepper to taste. Cook for five minutes and hot hold until needed.

INGREDIENTS

  • 1 fl-oz toasted sesame oil
  • 8 oz pan-roasted summer vegetables
  • 1 fl-oz hot sauce
  • 8 oz red snapper fillet
  • 1 fl-oz Kogi salsa roja
  • 8 oz garlic mashed potatoes

DIRECTIONS

  1. Heat 1 tablespoon of oil in cast iron skillet and add cut seasoned vegetables. Place them in a 350˚F oven.
  2. Preheat 1 tablespoon of oil in a saute pan until hot, add fish filet, brushed with hot sauce, belly side down and seared for 2 minutes. Flip and sear for another two minutes and remove from heat.
  3. Brush filet with salsa roja and place on top of roasted vegetables.
  4. Place back in oven. When fish is 145˚F internal temperature remove skillet from oven and place serving of hot garlic mashed potatoes on the side and serve!

INGREDIENTS
Serves: 50

13 lbs 10 oz  prepared reduced sodium mashed potatoes
50 of the 10-inch whole grain wheat tortilla item #8786
6 lb 4 oz cooked chicken strips item #6186
1 lb 9 oz reduced fat shredded cheddar cheese item #6003
3 quarts +1/2 cup black beans
3 quarts +1/2 cup salsa
3 cups chopped green onion
2 tablespoons low-sodium taco seasoning item #33134

DIRECTIONS

    1. Bake whole grain flour tortillas in large muffin tins.
    2. Heat chicken strips and toss with low-sodium taco seasoning.
    3. Heat black beans.
    4. Fill tortilla bowls with mashed potatoes, top with chicken and beans. Finish it off with cheese, salsa and green onion for garnish, and serve!

Serving Size: 1 bowl

2oz meat/meat alternate. 1.5oz equivalent grains. 1/2 cup starchy vegetables, 1/4 cup red-orange vegetables, 1/4 cup beans and peas.
